Happy New Year everyone! Happy 2015! I love new year’s and new beginnings. We can forget the past and have a fresh, new start! However, wanting to eat healthier and actually doing it consistently are two different things that unfortunately I know all too well. Today I have brought together some of my healthier recipes for breakfast, lunch, dinner, and dessert to get you started on that New Year’s resolution or just have to have some great recipes all in one place. As a bonus, I’m including several healthy dessert recipes from some of my favorite bloggers!
Healthy Breakfast Recipes
Mini Veggie Quiche Muffins are yummy portion controlled protein and vegetable packed mini quiches that you can make the night before or on the weekend before and they are perfect for an on-the-go breakfast.
Easy Huevos Rancheros are a delicious Mexican twist to breakfast to keep it interesting and never boring.
Strawberries and Cream Hot Quinoa Breakfast Cereal is a hot, yummy, gluten-free breakfast cereal made with high protein quinoa, greek yogurt, and strawberries.
Rustic Spanish Potato Omelette is a super easy breakfast that even the kids could make. It is a great make ahead recipe so breakfast is ready when you are. It also makes a great lunch or light dinner.
Healthy Lunch Recipes
Apple Walnut Cranberry Salad is a light healthy, vegetarian, gluten-free salad that fits into just about every diet on the planet and tastes fantastic.
Spinach Strawberry Champagne Salad is a light, fresh, strawberry spinach salad with a light vinaigrette.
Cranberry Chicken Salad Sandwich is not only a great way to use up leftover chicken but use a light mayonnaise or even greek yogurt to make this a light lunch.
Pepper Steak in Wonton Cups are an appetizer that can also make a great lunch or light dinner. Serve over rice or quinoa instead of in wonton cups to make gluten-free.
Chicken Parmesan Meatballs are fantastic yummy bite size meatballs that taste just like chicken parmesan. It is a fun way to serve a family favorite dish.
Quick and Easy Chicken Posole is a light chicken soup with lots of Mexican flavor. Traditionally made with pork, this version uses chicken for a light, yummy, and flavorful soup.
Chicken Noodle Soup, known for being great when you are sick, is also a delicious, comforting, and healthy soup. Toss in a few vegetables, or serve with a salad and you have a great healthy meal.
Healthy Dinner Recipes
Garlic Parmesan Oven Roasted Cauliflower is a healthy, delicious side dish. There is something about roasting vegetables that brings out incredible flavor. If you have not tried roasting vegetables I highly recommend it.
Oven Roasted Green Beans continues our theme of roasted vegetables, my favorite way of preparing them.
Slow Cooker Chicken Marrakesh is my favorite type of dish because it is delicious, healthy, easy, and a one pot wonder meal made in the slow cooker so you can enjoy your day and come home to a dinner that is already cooked. What’s not to love?
Slow Cooker Asian Sesame Meatballs taste so delicious no one would know they are healthy. I used gluten-free frozen meatballs, the brand I used also include turkey meatballs to make this dish even easier to prepare but tastes delicious.
Texas Thai Tacos are my other favorite way to fix dinner, use leftovers, and have dinner ready in 15-minutes, and have it be healthy and delicious!
Dr Pepper Maple Mustard Chipotle BBQ Chicken (Hey! What is Dr Pepper doing in a healthy recipe round-up? I call foul.) With a slight modification, this recipe can be made even healthier by omitting the Dr Pepper. If you want it sweeter just increase the maple syrup. Since the chicken is grilled, it is a delicious healthy and easy meal.
Healthy Dessert Recipes
Easy Strawberry Mousse is a yummy healthy and beautiful dessert.
Kefir Pudding Parfait is a delicious healthy pudding parfait made with a healthy high protein smoothie drink by Life Tastes Good.
Easy Butterfinger Dessert by Renee’s Kitchen Adventures lightens up everyone’s favorite candy bar dessert.
Grilled Peaches by The Life and Loves of Grumpy’s Honeybunch (Don’t you just love that name?) make a fresh, delicious, and beautiful dessert.
Healthy Dark Chocolate Peanut Butter Balls by Erica’s Recipes are chocolate and peanut butter made healthy. I’m in heaven!
Lemon Curd and Strawberry Tart with a Sugar Cookie Cup from Eazy Peazy Mealz is a perfect, delicious, bite-size mini dessert.
Maple Pecan Coconut Macaroons from The Foodie Affair are fantastic little bite size sweet treats.
Guilt-Free Snickerdoodle Mug Cake from Frugal Foodie Mama is a single serving cake to meet those sweet cravings without breaking the calorie bank.
