Garlic Parmesan Oven Roasted Cauliflower is a delicious, healthy and savory side dish that is perfect for a weeknight meal or as a Thanksgiving or holiday side dish.

Roasting gives vegetables such an earthy, savory flavor unlike any other cooking method. As a kid, I would not eat cauliflower. It was not until I was an adult that I tried roasted cauliflower for the first time and loved it! Why in the world did I wait so long? It is my favorite way to prepare cauliflower.

And cauliflower is so versatile, once you have roasted it, you can use it to make a pizza crust, or as faux mashed potatoes, or in cauliflower chowder. Of course, I love it just as a side dish as it is.
