This Cranberry Chicken Salad Sandwich, with cranberries, pecans (or walnuts), tomatoes, onions and celery, is a delicious way to use up leftover chicken without heating up the kitchen.
I love chicken salad and chicken salad sandwiches. They taste great. They are creamy and crunchy, savory and even slightly sweet. They are a great way to use up leftover chicken, which makes them budget-friendly as well.
These sandwiches are also great after Thanksgiving using leftover turkey instead of chicken. Then you can also mix in other leftover ingredients you have on hand like onions, celery, dried cranberries, and pecans. I also like to add in chopped tomatoes. However, you could also leave that out and serve it with sliced tomatoes on the sandwich instead.
These nice thing about these sandwiches is that you can change them up for whatever ingredients you have on hand. You could add chopped apples or almonds, or more chopped veggies.
After Thanksgiving I love the fact that that I don’t have to do more cooking or heat up the kitchen again to have these delicious leftovers. And they are so easy, you can have your family members make them (and bring you the sandwich!)

Cranberry Chicken Salad Sandwich
Ingredients
- 2 cups cooked chicken shredded or cubed
- 1/2 cup mayonnaise
- 1 teaspoon mustard
- 2 stalks chopped celery
- 1 small onion chopped
- 1 to mato chopped
- 1/2 cup dried cranberries
- 1/2 cup chopped pecans
- 8 slices bread
- lettuce
- sliced tomatoes
Instructions
- In a large bowl add in the first 8 ingredients. Stir until chicken chicken is thoroughly coated and all ingredients are evenly distributed.
- Serve on bread with lettuce and tomatoes, if desired.
