Spaghetti
- Water to fill pan
- Spaghetti noodles – Use regular spaghetti or whole wheat spaghetti.
- Salt
- White Onion – I used white onion, but feel free to use yellow or Vidalia as well.
- Garlic cloves – Ideally, I recommend garlic cloves. However, you can use minced garlic as well.
- Bay leaves – You’ll need a couple of bay leaves
- Olive Oil
- Butter
- Chicken Bouillon – Instead of chicken bouillon, you could use chicken broth or chicken stock instead of the water and chicken bouillon.
Chipotle Spaghetti Sauce
- Roma Tomatoes
- Mexican oregano
- Chipotle peppers from canned chipotle in adobo sauce
- Mexican Crema
- Spaghetti water – the water in which the spaghetti was cooked.
- Queso fresco crumbled
- Cilantro, chopped
How To Make Spicy Spaghetti
Directions
Mexican Spaghetti
- Fill a large pan with water to boil the spaghetti. Add the slice of onion, 2 whole garlic cloves, salt, and bay leaves. Boil for 2 minutes, add the spaghetti, and cook according to the package directions. This is usually about 8 to 10 minutes. Taste a piece of spaghetti to see if it is fully cooked. Discard the onion, garlic, and bay leaves.
- Remove the spaghetti from the water, and reserve ⅔ cup of the spaghetti water.
Chipotle Sauce
- While the spaghetti is cooking, bring a small pan of water to a boil and add the tomatoes. Boil till the skin burst, then remove the tomatoes and place them in a blender.
- Blend the tomatoes, Mexican oregano, and chipotle peppers well, if you need to, you can add the spaghetti water to help it blend well.
- In the large saute pan, heat the olive oil and butter, add the ¼ cup of grated white onion, and grate the 2 garlic cloves. Cook for 3 to 4 minutes; pour the tomatoes into the pan and cook for another 5 minutes.
- Slowly pour the cream into the sauce, whisking to keep it from curdling.
- Lift the noodles into the sauce and stir to combine. Cook for 1 to 2 minutes.
- Remove from the heat and serve. Add a sprinkle of queso fresco and cilantro to the top of each plate.
- These noodles are great served by themselves or as a side dish for meats and all Mexican foods.

How To Prevent Spaghetti From Sticking.
- To prevent spaghetti from sticking, be sure to add enough water to completely cover the spaghetti.
- Make sure water comes to a complete hard boil before adding pasta.
- Add some of the spaghetti going in one direction, and the other spaghetti going in a different direction to create a cross-hatch design.
- Pour the sauce on the spaghetti immediately after draining the spaghetti.

Hi Michele, I discovered your recipe from a friend who posted a pic on FB … I look forward to making it. But I have a question — the recipe calls for 2 tsp chicken bouillon, but I’ve read through all your descriptions twice and can’t find where to use the bouillon in making the recipe.

It should be fine for up to 3 days. After that, it may lose some of its texture. So I recommend eating within 3 days.
