Spinach Strawberry Champagne Salad

I have partnered with my favorite bloggers to bring you an Easy Valentine’s Day Dinner. We have created a a super easy four course gourmet meal so you can enjoy an evening at home without a lot of work!

For my part of the dinner, I made a delicious Spinach Strawberry Champagne Salad.  It has fresh baby spinach, fresh sliced strawberries, crumbled blue cheese, and chopped walnuts.  You could use candied walnuts as well. To make the salad extra special, I use the Orange Muscat Champagne Vinegar from Trader Joe’s in the vinaigrette.  It adds a wonderful sophisticated flavor for this special occasion.

Spinach Strawberry Champagne Salad

Spinach Strawberry Champagne Salad has fresh baby spinach, fresh sliced strawberries, crumbled blue cheese, and chopped walnuts with Trader Joe's Orange Muscat Champagne Vinegar

Ingredients


    Champagne Vinaigrette:

    • 2 tablespoons cup olive oil
    • 2 tablespoons Orange Muscat Champagne Vinegar from Trader Joe's
    • 1/2 teaspoon dijon mustard
    • 1 teaspoon white sugar
    • 1/4 teaspoon garlic powder
    • 1/4 teaspoon italian seasoning


      Spinach Strawberry Salad

      • 3 cups baby spinach leaves
      • 1/4 cup blue cheese
      • 1/2 cup chopped walnuts
      • 1 cup sliced strawberries

      Instructions

      • In a small bowl stir together all the ingredients for the vinaigrette. Set aside.
      • In a large bowl toss together the spinach, blue cheese, walnuts, and strawberries. Just before serving, drizzle the vinaigrette over the salad.

      The Orange Muscat Champagne Vinegar can be found at Trader Joe's.

        What a delicious combination of flavors!!! I don’t have the champagne vinegar, but I bet a good white wine vinegar would work too!! Can’t wait to make this!
