Strawberries and Cream Quinoa Breakfast Cereal

Yeah, Yeah, I know I need to eat healthy.  I know I need to lose weight.  I don’t always want to, but I know I need to. However, if I’m going to eat healthy, I want it to taste good.

For breakfast I often get in a rut, fixing the same thing several days in a row just because it is easy, and I don’t have to think too hard about what to make. I don’t want to strain the old brain too early in the morning!  😉  Do you ever do the same thing?

So recently I have seen quinoa turned into a hot breakfast cereal for a healthy breakfast.  Hmmm. It is healthy. It is gluten free. I like quinoa. At least I have liked it as a side dish to dinner, like in my Bang Bang Chicken with Quinoa recipe and my Mexican Quinoa recipe.

Last Friday I decided I’m going to give it a try. I saw a Strawberry Breakfast Quinoa recipe on my friend’s blog, Anyonita Nibbles, and another Strawberries and Cream Breakfast Quinoa on Alaska from Scratch. Anyonita’s recipe includes warm milk, quinoa, cinnamon, honey and strawberries. Yum! The recipe from Alaska from Scratch uses quinoa, greek yogurt, strawberries and almonds. So what do I do?  I basically combine the two recipes and add a little something extra of my own.

Strawberries and Cream Quinoa Breakfast Cereal

The first thing to do is cook the quinoa according to the package  directions. Meanwhile in a small bowl I mix plain greek yogurt  with sugar (I use Whey Low), vanilla, cinnamon, and nutmeg.  If you have vanilla yogurt, that would work as well.

Combine the yogurt mixture with the hot quinoa, and add sliced strawberries. Blueberries would be great with it also. Top with chopped walnuts. I meant to do that but then realized I was out of walnuts, which is why you don’t see them in the photos.

It really is a simple recipe for a healthy, hearty, gluten-free breakfast. If you already have leftover quinoa that will save time.

Ingredients

  • 1 cup cooked quinoa
  • 1/2 cup greek yogurt
  • 1/2 teaspoon vanilla
  • 2 teaspoons sugar add more or less for desired level of sweetness
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup sliced strawberries
  • 1/4 cup chopped walnts

Instructions 

  • Cook the quinoa according to the package directions.
  • Meanwhile in a small bowl, mix plain greek yogurt with sugar, vanilla, cinnamon, and nutmeg.
  • Combine the yogurt mixture with the hot quinoa, and add sliced strawberries. You can either mix the strawberries in the quinoa mixture or place them on top or both.
  • Top with chopped walnuts. Serve hot.

    This looks like a delish way to get out of my oatmeal rut. I do love quinoa. I usually cook it up with broth, but I’ll make a batch just for this dish. Thanks Michele!
