Pico de Gallo Salsa is a delicious, colorful, spicy, healthy Mexican or Tex-Mex appetizer dip that is perfect for the upcoming Cinco de Mayo or graduation celebrations! It will keep everyone happy since it fits into a vegan, gluten free, low carb, low fat, or Paleo diet plan.
I LOVE Tex-Mex food. To me it is comfort food because I have lived in Texas all my life. However, most Tex-Mex food, while delicious, is cheesy, greasy, and unhealthy. That is why I LOVE this pico de gallo salsa. It is loaded with flavor and spiciness, yet is still healthy. Everyone at the party can enjoy this because both the meat eaters and vegetarians love it.
Who knew that a few fresh ingredients could combine for such a delicious taste. The combination of tomatoes, garlic, onion, cilantro, jalapeños, and lime juice taste great together as a salsa or make any recipe extra special.
I love to use this salsa, not only as a dip, but as an ingredient in many recipes. It can be used in my Sizzling Steak Fajitas recipe or in my Game Day Guacamole, which would also be perfect for Cinco de Mayo or graduation parties.
When I was making this, it reminded me of the Fiesta celebrations held in April in San Antonio, Texas every year. They don’t wait for Cinco de Mayo. They have their own celebration that lasts for about 10 days during mid to late April. I no longer live in San Antonio but I miss the celebrations and parades and fairs.
Since I can’t go to San Antonio for the fiesta, I will have my own at home with this delicious pico de gallo salsa. Create your own fiesta with this fantastic salsa.
Recipe
Pico de Gallo Salsa
Ingredients
- 3 roma tomatoes diced
- 1 onion chopped
- 2 jalapeno peppers seeded and chopped (adjust to taste)
- 1/4 cup fresh cilantro finely chopped
- 1 clove garlic minced
- 1 small lime juiced
- 1/2 teaspoon salt optional
Instructions
- In a medium bowl combine tomato, onion, jalapeño, cilantro, garlic, and lime juice.
- Cover bowl with plastic wrap and refrigerate for about 1 hour.

To me there is nothing better than fresh salsa! I hate it when I go to a Mexican Restaurant and their salsa is not fresh made. Turns me off from the whole place. LOL Your photos make it look absolutely delicious!
