Steak Fajita Roll Ups make a healthy yet flavorful low carb or Keto dinner. Perfectly grilled marinated steak fajitas wrapped around sautéed fajita seasoned onions and peppers.

Steak Fajitas are one of my favorite Tex Mex Recipes. Whenever I came home after traveling internationally, fajitas were the food that I craved the most.

Whether it was my Tex-Mex Beef Fajitas, Steak Quesadillas, Skillet Chicken Fajitas, Instant Pot Chicken Fajitas or these Low Carb Steak Fajita Roll Ups, it didn’t matter. I loved that marinated chicken and steak seasoned with my Fajita Seasoning! Fajitas are the best thing in the world to me!

As you can tell based on all my fajita recipes that I know fajitas, and you can trust these fajita recipes, including this recipe. I live in the heart of Tex Mex country, and have eaten Tex Mex and fajitas all my life.

Why You’ll Love These Low Carb Fajita Roll Ups

  • Flavor. They have an awesome flavor of the marinated steak along with the flavor of the onions and red and green bell peppers.
  • Low Carb. By losing the tortilla, you also lose the carbs, which makes these delicious Steak Fajita Roll Ups low carb.
  • Easy To Make. While it does require a little pre-planning due to the marinade, after marinating, it comes together very easily, and you can have your low carb Mexican Dinner on the table in 15 minutes.

What Is The Best Steak For Fajitas?

Flank Steak or Skirt Steak is typically recommended for Fajitas. They are very flavorful cuts of meat but can be tough. That is why marinating the steak is recommended because that will add even more flavor and make the steak more tender.

How To Make Steak Fajitas More Tender

Steak Fajitas are known for their flavor, and they are very flavorful. However, sometimes the skirt steak or flank steak can be somewhat tough. However, there are a couple of things that you can do to make the steak more tender.

  • Marinate The Steak in the Steak Marinade before cooking. The loosens the fibers that can sometimes make the meat tough. This makes the steak more tender and gives it a lot of flavor.
  • Cut Against The Grain. When slicing the skirt or flank steak, cut it against the grain to keep the meat tender. Otherwise, if you don’t cut against the grain, the steak can be tough.

How To Make Steak Fajita Roll Ups

Below, I discuss the ingredients and possible substitutions if you don’t have a specific ingredient. However, if you are looking for the specific measurements of each ingredient, scroll down to the bottom of this article, just above the comments, for the printable recipe card, which includes all the ingredients and the specific amounts of each one.

Steak Marinade Ingredients

  • Salt and Pepper. I used Kosher salt and freshly ground black pepper.
  • Garlic. You can use store-bought pre-minced garlic or fresh garlic.
  • Dried oregano. I recommend Mexican oregano if you have it. Otherwise, use the oregano that you have on hand.
  • Ground cumin
  • Chili powder
  • Cayenne pepper
  • Garlic powder
  • Olive oil
  • Lime Juice

Steak Fajita Roll Ups Ingredients

  • Steak Marinade. See above for the ingredients.
  • Steak. Flank Steak, Skirt Steak. See discussion above regarding which steak is best for fajitas.
  • Green bell pepper
  • Red bell pepper
  • Onion sliced
  • Unsalted butter

How To Marinate Steak For Fajitas

  • In a small bowl stir together all Steak Marinade Ingredients.
  • Place the steak in a large baking dish and pour the marinade over the steak.
  • Cover and place in the refrigerator.

How Long To Marinate Skirt Steak or Flank Steak

  • Ideally, for the best flavor and most tender steak, marinate 8 hours or overnight.
  • However, if you are short on time, marinate for at least 1 hour.
  • The longer you marinate the more flavorful and tender the steak will be.

How To Make Steak Fajita Roll Ups

  • When ready, preheat the oven to 400 F | 205 C. Prepare a baking tray with parchment paper.
  • Remove steak from marinade, place on a cutting board and cut into 6-7 pieces.

  • Equally divide bell peppers and onions into the middle of each piece of steak. Roll steak around vegetables. Secure with toothpicks and place in the baking dish.
  • Drop butter around the steak rolls. Transfer in the oven and bake for 5-8 minutes depending on the doneness you prefer.
  • Remove from the oven and allow to rest for 5 minutes before serving.

Recipe Tips

Marinating and Type of Steak. If you are in a hurry, you could skip marinating the steak, but I don’t recommend it. If you want to skip the marinating, then you may want to use a ribeye steak instead of flank or skirt steak because the ribeye is naturally more tender and will be flavorful without marinating.

Can I Grill The Steak Fajita Roll Ups?

Grill the vegetables first. Then place the vegetables in the center of the steak and roll them up and grill the steak.

Can I Make This Recipe On The Stove?

Yes, it can be done in a cast iron skillet. Make sure that cast iron is smoking hot. Use tongs instead of a fork.

Can You Make Steak Fajita Rolls Ahead of Time?

This recipe is best when served fresh. However you can marinate the steak in advance, overnight in the refrigerator.

  • Cauliflower Rice for low carb and gluten free.
  • A Green Salad
  • Mexican Shrimp Cocktail
  • Homemade Guacamole
  • Pico de Gallo
  • Mexican Rice
  • Cilantro Lime Rice
  • Mexican Cauliflower Rice

How To Store Leftovers

I did not store leftovers as rolls. After the steak fajita rolls have cooled down completely, I cut the steaks and vegetables in cubes and then store them in an airtight container. They can be stored up to 3 days.

To reheat, I added a bit of vegetable broth and butter to give back the moisture and heated in the oven at 180 C | 356 F. and serve with warm tortillas.

Can I Freeze Steak Fajita Roll Ups?

Freeze only uncooked marinated steak in a ziplock bag. Defrost completely overnight in the refrigerator before cooking.

Ingredients

Steak Marinade Ingredients

  • Kosher salt and black pepper to season

  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon cayenne pepper

  • ¼ cup extra virgin olive oil
  • 1 tablespoon lime juice

  • 1 pound Flank steak – cut in 6-7 pieces
  • 1 large green bell pepper sliced
  • 1 large red bell pepper sliced
  • 1 medium onion sliced
  • 1 tablespoon unsalted butter

Steak Marinade Instructions

  • In a small bowl, mix salt, pepper, garlic, oregano, cumin, chili powder, cayenne pepper, garlic powder and olive oil.

  • Place the steak in a large enough baking dish.
  • Pour marinade on the steak and massage both sides a bit, cover with a foil and marinade for a minimum of 1 hour to overnight.
  • When ready, preheat the oven to 400 F | 205 C. Prepare a baking tray with parchment paper.
