Light Gluten Free Blueberry Muffins

These Light Gluten Free Blueberry Muffins taste sweet and delicious, just like regular blueberry muffins but are gluten free and lower in calories!

For the last month or so we have been taking care of my Mother-in-law after she was released from the hospital. Therefore, I have been focused on making healthier, lower calorie, lower carb foods not only for her but for all of us. She doesn’t want to give up her sweets though, and is very picky about the taste, as is Mr. Flavor Mosaic.

After heart surgery, they want her to reduce her salt intake, and because she is diabetic, we are supposed to reduce the carbs, and sugar. If those were not challenges enough, she also has a ferocious sweet tooth. So trying to fix her sweets that are low carb, low sugar, low salt, as well as low calorie is a challenge. And I don’t want to buy exotic ingredients that I won’t use on a regular basis.

Breakfast was also one of the challenges because other than muffins or coffee cake, she only likes eggs or oatmeal. However, she tires of them quickly and wants sweet breads, pancakes, french toast, or muffins….things that with the standard preparation are not low carb or low sugar.

However, I came up with a recipe that meets all of her dietary requirements and still tastes great. The recipe resulted in beautiful, deliciously sweet muffins made with fresh blueberries. My Mother-in-Law couldn’t taste the difference between these and regular blueberry muffins.
