Turn a boring lunch or dinner into a fast and fabulous Gluten Free Fiesta with Udi’s Chicken Burritos filled with Black Beans and Cheddar Cheese.
With the new year, of course, I have New Year’s resolutions like everyone else. One of them is to eat healthier. Since I have noticed recently I have some food sensitivities when eating certain foods, I am trying to eat more gluten-free meals.
However, with working full-time and blogging part-time full-time, I need quick and easy meals, especially for lunch. I still want it to be gluten free but I don’t want it to spend a bunch of time in the kitchen preparing it. That is why I like Udi’s Chicken Burritos with Black Beans and Cheddar Cheese. Not only is it a quick and easy, gluten-free, high protein addition to any meal, but I also like that it includes chicken raised without antibiotics.
For my Mexican Fiesta lunch or dinner meal, I served Udi’s Chicken Burritos over mixed salad greens and with pico de gallo salsa made with fresh tomatoes, onions, garlic, and jalapeños.
As a side, instead of Mexican or Spanish rice, I made Mexican Quinoa, a high protein, gluten-free grain similar to Mexican or Spanish rice. It cooks up exactly like rice and is a great way to bulk up the meal.
In addition, you could also chop up some avocados and slice up some limes to add to your meal.

Michele, I want this so bad right now. I loved that you swapped out the rice and use quinoa instead. I told my son that Lebron James eats quinoa, so now he wants it all the time. Haha
