In a couple of weeks, the big international athletic competition will begin. The best athletes from all around the world will be competing in the various sporting events. Do you watch these events? We do. We get out all our red, white, and blue clothing, napkins, paper plates, you name it, and cheer for our red, white, and blue team.
In honor of the upcoming games, I made this red, white, and blue Berry Coconut Pecan Oatmeal. For some reason when I think of athletes, I picture in my head that they eat a good, wholesome breakfast to start each day in order to have the energy they need.
Whether they all actually do this, I have no idea. However, I thought I would create a wholesome breakfast with less sugar added that was red, white, and blue and was fit to be eaten by an athlete, (and by you and me and other mere mortals.)
I started with whole grain oats, and added chopped raspberries, fresh blueberries, flaked coconut, and chopped pecans. To sweeten it up without adding sugar, I added SPLENDA® Sweetener in the yellow box with the “Made In America” packaging that has a picture of the red, white, and blue packet on it. I love the fun, patriotic packaging, but I also like the fact that SPLENDA® is made in America.

I believe you will love this Berry Coconut Pecan Oatmeal not only because it tastes so amazingly delicious but also because it is so easy to make. With only a few ingredients, you can have this oatmeal ready in 5 minutes. It has a sweet, nutty, crunchy texture added to the creamy oatmeal.
I love to take advantage of the fresh seasonal summer berries, and they add such color and flavor to this Berry Coconut Pecan Oatmeal.

Berry Coconut Pecan Oatmeal
Ingredients
- 1/2 cup whole grain oats
- 1 cup water
- 1/3 cup milk Optional: May need to adjust amount
- 1/4 cup chopped raspberries rinsed and drained
- 1/4 cup fresh blueberries rinsed and drained
- 2 tablespoons flaked coconut
- 2 tablespoons chopped pecans
- 2 packets SPLENDA® No Calorie Sweetener
Instructions
- In a medium bowl add the oats and pour in the water and stir. Microwave for about 1 minute at a time stirring in between until the oatmeal is the preferred consistency.
- Optional: add milk and stir.
- Stir in raspberries, blueberries, flaked coconut and chopped pecans and SPLENDA® No Calorie Sweetener. Enjoy!

What a great breakfast to start your day. Love the less sugar because we certainly we all eat to much of it. This would be great for my teen’s swim team breakfasts. Love the burst of fresh fruits too.

That looks wonderful. I would use fresh or frozen fruit in it. I’m not a huge fan of coconut, You think I could just leave that out and up the fruit and nuts?

Hi Alma, that is the wonderful thing about recipes, you can customize them to your own taste preferences. If you are not a coconut fan, that is ok. It would be delicious even if you leave it out, and increase the fruits and nuts. Go for it!
