Strawberry Pancakes
Make ordinary pancakes extraordinary by making these strawberry pancakes. I use my Old Fashioned Fluffy Pancakes recipe as the base and add chopped fresh strawberries and then top them with maple syrup, more strawberries, and whipped cream.
These simple additions of the strawberries and whipped cream really dress up the pancakes and make them pretty and fun. They are perfect to serve on Mother’s Day, or Valentines Day, for birthdays, or for a weekend breakfast or brunch.
Strawberry Season and Strawberry Festivals
I know it is strawberry season when the Poteet Strawberry Festival comes around. Each year people from the local strawberry farms come together to celebrate and the sweet, wonderful, incredible strawberry. It is one of my favorite Spring festivals.
At the strawberry festival, the food is out of this world. They have strawberry shortcake, (of course), as well as various strawberry pies, and strawberry cheesecakes. I also love u pick strawberry farms as well.
What makes the strawberry festivals fun and enjoyable are all the sweet, juicy fresh strawberries. The fresh strawberries make a big difference in the recipes, especially this strawberry pancakes recipe.
How To Make Strawberry Pancakes
Ingredients
To make Strawberry Pancakes with fresh strawberries, you will need the following ingredients:
- Dry Ingredients
- 1 cup all-purpose flour
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup granulated sugar
- Wet Ingredients
- 3/4 cup milk with 1 tablespoon vinegar (or 3/4 cup buttermilk)
- 1 egg
- 2 Tablespoons melted butter (plus a little more butter to grease the griddle or skillet)
- 1 teaspoon vanilla
- Add-In Ingredients
- 1-1/2 cups chopped fresh strawberries
Instructions For How To Make Strawberry Pancakes
- Make The Homemade Sour Milk.
- Stir the vinegar into the milk and let it sit for about 5 minutes.
- Mix The Dry Ingredients.
- In a large bowl stir together all the dry ingredients. This includes flour, sugar, baking powder, baking soda, and salt. The amounts are listed above.
- Mix The Wet Ingredients.
- In a separate bowl or large measuring cup, add in the wet ingredients, which include the milk/vinegar mixture, egg, melted butter, and vanilla.
- Combine The Wet and Dry Ingredients.
- Pour the wet ingredients into the dry ingredients and whisk to remove most lumps and until you get a thick pancake batter.
- Add Strawberries.
- Add 1 cup of chopped strawberries to the pancake batter.
- Cook The Pancakes.
- Heat a skillet or griddle over medium heat.
- Coat the griddle or skillet evenly with butter.
- Drop 1/4 cup strawberry pancake batter on the hot griddle or skillet.
- Cook for 1 minute or 2 until bubbles form and start to pop.
- Turn and cook the strawberry pancakes on the other side for about one or two minutes.
Tips For Perfect Strawberry Pancakes
- Make sure the baking powder and baking soda are fresh and that the dates have not expired. The pancakes won’t be fluffy is the baking powder and baking soda are out of date.
- Make sure the griddle or skillet is hot but not too hot. Medium heat works well. You should not have to go higher than that.
- Make sure the griddle is hot before dropping the batter on the griddle or skillet.
- Don’t turn the pancakes until you see bubbles form and start to pop.
What To Serve with Strawberry Pancakes
- Serve with maple syrup.
- Top with fresh strawberries.
- Top with whipped cream.
- If desired, sprinkle powdered sugar over the top.
- Serve with Candied Bacon and Breakfast Potatoes on the side.
