Chipotle Sweet Potatoes with La Vaquita® Queso Fresco adds an authentic Mexican twist to sweet potato fries with the addition of chipotle chile powder and queso fresco.
Sweet potatoes fries are so delicious with the soft center and crispy exterior. The sweet potato fries are delicious by themselves. However, I have taken them over the top by using waffle fries and seasoning them with chipotle chile powder and topping them with crumbled La Vaquita® Queso Fresco. It adds an authentic Mexican taste without any extra effort.

This is the story of La Vaquita® Queso Fresco. It was created by Maria Castro, who immigrated to the US from San Luis Potosi, Mexico. She began making her artisanal cheese in her home in Houston, Texas, which I think is pretty cool because that is my hometown. She learned how to make Queso Fresco from her grandmother on their family farm in Mexico.
As her friends and neighbors tried the authentic Mexican Queso Fresco, the word got around and more and more people requested her cheese.
La Vaquita® Queso Fresco represents family traditions that have been handed down through generation after generation of Mexican homestead cheesemakers and has helped define how Hispanic cuisine is enjoyed in Texas. It is still hand wrapped in Texas.
I love adding La Vaquita® Queso Fresco crumbles to traditional dishes to give them a Mexican twist. It is so easy to add so much authentic Mexican flavor.
I bought the La Vaquita® Queso Fresco and La Vaquita® Queso Fresco Salvadoreno at Kroger. However, before you head to the store check out the Ibotta offer for La Vaquita® Queso Fresco.
I love using La Vaquita® Queso Fresco, or “fresh cheese,” as a crumbling cheese, similar to feta, goat cheese, or blue cheese. I love the cool taste of the La Vaquita® Queso Fresco, combined with the Chipotle seasoning, and the sweet potatoes.
For a sharper cheese taste, try the La Vaquita® Queso Fresco Salvadoreno. It is delicious as well.
For this recipe, I selected the slightly more subtle flavor of La Vaquita® Queso Fresco for these Chipotle Sweet Potatoes to nicely balance out the other flavors in the dish. However, La Vaquita® Queso Fresco Salvadoreno would be delicious as well.
These Chipotle Sweet Potatoes with La Vaquita® Queso Fresco are so flavorful and easy to make that you can’t go wrong with this dish. I used frozen waffle fries and seasoned them with salt, pepper, garlic powder, and chipotle chile powder. Baked them on a baking sheet for 20 – 25 minutes.
However, the key to these sweet potato fries is the addition of the La Vaquita® Queso Fresco crumbles. That really gives it the authentic Mexican flavor. Then I garnish the sweet potato fries with chopped cilantro.

Chipotle Sweet Potatoes with Queso Fresco
Ingredients
- 1 package frozen sweet potato fries I used sweet potato waffle fries
- salt and pepper to taste
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chipotle chile powder
- 1/2 cup crumbled La Vaquita® Queso Fresco
- 2 tablespoons chopped cilantro
Instructions
- Preheat oven to 425 degrees F. Cover a baking sheet with foil and spray with cooking spray.
- Season the sweet potato fries with salt, pepper, garlic powder, and chipotle chile powder.
- Bake for 20 minutes.
- Remove from oven.
- Sprinkle with La Vaquita® Queso Fresco crumbles.
- Garnish with chopped fresh cilantro.
