Since I’m always looking for delicious yet healthier options, I was excited to partner with HEB to create this delicious Stir Fry Zucchini Noodles recipe using Veggie Noodle Co. Zucchini Spirals.
Stir Fry Zucchini Noodles, or zoodles, make a quick and easy low carb side dish that does not require a Spiralizer and is loaded with Asian-inspired flavor.
Do you spiralize? Do you have a spiralizer yet? If not, don’t worry. With Veggie Noodle Co. Zucchini Spirals, you don’t need one. They have done all the work for you.
All you have to do is open the package to the veggie spirals and start cooking! You don’t have to drag out an appliance, trying to find the right blade to spiralize, and you save time with meal prep and clean up.
Veggie Noodle Co. Zucchini Spirals also have multiple varieties. I tried the Zucchini Spirals, but they also have Butternut Spirals, Sweet Potato Spirals, and Beet Spirals!

You can substitute any of the varieties of the Veggie Noodle Co. Spirals for noodles in any recipe. I like the Zucchini Spirals. You may have heard zucchini substituted as noodles called zucchini noodles, or zoodles. Whatever you call it, it is delicious.
I have used Zoodles in Zucchini Noodles With Pesto And Bacon as well as this recipe.
I love Asian inspired dishes and noodle bowls, so I decided to stir fry the Zucchini Spirals with onions, bell peppers, garlic, ginger, and soy sauce. I also added a few red pepper flakes for some heat. It tastes fabulous and cooks up in about 10 minutes and is ready to eat!

These Stir Fry Zucchini Noodles are so easy that you just saute a sliced onion and bell pepper in some oil in a skillet.
Then add the Veggie Noodle Co. Zucchini Spirals and cook until the vegetables are softened.
Then I add garlic, ginger, sesame oil, and soy sauce to the Stir Fry Zucchini Noodles.
Then the Stir Fry Zucchini Noodles are ready to serve!

Stir Fry Zucchini Noodles Recipe
Ingredients
- 1 10.7-ounce package Veggie Noodle Co. Zucchini Spirals
- 1 Tablespoon oil
- 1 onion sliced
- 1 green bell pepper sliced
- 2 teaspoons minced garlic
- 1 teaspoon minced fresh ginger
- 1 teaspoon sesame oil
- 2 Tablespoons low sodium soy sauce
- 1/2 teaspoon crushed red pepper optional
Instructions
- In a large skillet over medium heat, add oil. Saute the sliced onion and bell pepper for about 2 minutes. Add the Veggie Noodle Co. Zucchini Spirals and cook for a couple of minutes until softened. Add garlic and ginger and stir for a minute.
- Add sesame oil and soy sauce and stir. Add crushed red pepper, if desired.
- Serve the Stir Fry Zucchini Noodles hot.
