Zucchini noodles, or Zoodles as they are sometimes called, make a wonderful pasta substitute and are also very versatile. Add them to soups, salads, pasta salads, casseroles, and more! The possibilities are endless.
Zucchini is my favorite summer vegetable, and zucchini noodles, are our favorite way of fixing them. What Are Zoodles?
Zoodles are zucchini that has been sliced into the shape of pasta.
They are very mild and will take on the flavors of sauces and other ingredients, which is another reason that they make a great pasta substitute.
How To Create Zucchini Noodles
You can create the long zucchini noodles by using a Spiralizer, mandolin, or vegetable peeler to slice the zucchini into long, skinny slices.
How To Make Zucchini Noodles With Pesto And Bacon
With only 4 ingredients it is very easy. For more details about each ingredient, including specific amounts for each one, scroll down to the recipe card at the bottom of the post, just above the comments.
Ingredients
- Fresh Zucchini that has been sliced or spiraled into zucchini noodles.
- Premade Pesto Sauce. I used a convenient store-bought pesto but you could make your own Pesto sauce if you preferred.
- Bacon. I cooked up bacon and chopped it into pieces but you could use store-bought bacon bits if you liked.
- Tomatoes. I chopped up some fresh Roma tomatoes and tossed in the dish. This recipe is a great way to use up that summer produce.
Directions
- Cook The Bacon. I chopped up the bacon and cooked the bacon pieces in a skillet on the stove top. However, if you preferred, you could bake the bacon, and then chop it up into pieces.
- In a medium bowl, toss the cooked bacon with the noodles, pesto sauce, and chopped tomatoes.
- In a microwave safe bowl, cook zucchini noodles for 4-5 minutes, or until they become tender (I cook at 1 minute intervals).
- Stir all the ingredients together so everything is covered with the pesto sauce and the tomatoes and bacon are distributed evenly throughly the zucchini noodles.
- Serve with more sliced tomatoes for a light, delicious summer meal!

Zucchini Noodles With Pesto And Bacon
Instructions
- Slice zucchini using a spiralizer, mandoline, or julienne slicer, and set aside.
- Chop bacon into bite-size pieces. Cook bacon fully, remove from pan. (I prefer to place mine on a paper towel to soak up some grease.)
- In a microwave safe bowl, cook zucchini noodles for 4-5 minutes, or until they become tender (I cook at 1 minute intervals).
- Toss noodles with pesto, bacon and chopped tomatoes. ENJOY!
