Berry Cheesecake Salad - Summer Red White & Blue Cheesecake Salad

This easy Berry Cheesecake Salad is a sweet and creamy, patriotic, red, white and blue dessert salad that requires no baking, making it perfect for a summer holiday BBQ, picnic, or potluck, such as for Memorial Day or July 4th.

This Berry Cheesecake Salad is a variation of my popular Strawberry Cheesecake Salad, except this one is red, white, and blue, and also has no added sugar or artificial whipped topping.

Why Is It Called A Cheesecake Salad Instead Of A Cheesecake Dessert?

Basically, A Cheesecake Salad is a type of Dessert Salad. What is a Dessert Salad? Per Wikipedia, “Dessert salads are dishes made with jellos, whipped toppings, fruits, vegetables, mayonnaise, and various other ingredients. These salads are served at some buffet and cafeterias, and are also served at potlucks and parties. They can be prepared ahead of time and are transportable.”

What Makes This Berry Cheesecake Salad Recipe Work?

  1. This Berry Cheesecake Salad, or Red, White, and Blue Cheesecake Salad, if you prefer, is a delicious, sweet and creamy dessert that requires no baking!
  2. It only has only a few ingredients, including fresh summer blueberries and strawberries that make it taste delicious, as well as make it look very pretty and patriotic, with its red, white, and blue colors.
  3. This Berry Cheesecake Salad recipe works because it uses fewer artificial ingredients like a refrigerated whipped topping (like Cool Whip.)
  4. In addition, this recipe does not include added sugar. Instead it uses a sweetener called Swerve. My Keto blogger friends introduced me to Swerve and Swerve Confectioners. It is a blend of erythritol that has no aftertaste, does not impact glucose levels, and measures out cup for cup the same as sugar. 
  5. With its red, white, and blue color, t is a perfect patriotic dessert for a July 4th or Memorial Day picnic.

What Ingredients Are Needed To Make Berry Cheesecake Salad?

With only 6 ingredients, anyone can make this Berry Cheesecake Salad. You will need the following items.

  1. Strawberries. I love to use fresh strawberries for this Cheesecake Salad. However, you could use raspberries instead and still have that patriotic, red, white, and blue presentation.
  2. Blueberries. The fresh blueberries, along with the strawberries, give it that red, white and blue color, and add sweetness.
  3. Cream Cheese.  You can use regular cream cheese, or 1/3 less fat or Neufchatel, or sometimes called farmer’s cheese. Just be sure that the cream cheese has been softened. Otherwise, it will be very difficult to mix and get that creamy texture required for this dessert salad.
  4. Heavy Cream. Instead of whipped topping, like Cool Whip, heavy cream is used instead. This is beaten with the cream cheese to get that smooth, creamy texture.
  5. Pure Vanilla Extract. Pure vanilla extract is used in the cream cheese mixture to add flavor. Be sure to use real vanilla and not imitation vanilla. That makes a big difference.
  6. Swerve Confectioners.  As mentioned above, this sweetener has no aftertaste and does not impact glucose levels. However, if you still want to use powdered sugar, you can use the same measurements in the recipe as Swerve Confectioners and it will work.

How To Make Berry Cheesecake Salad

  1. In a large bowl, beat the softened cream cheese until it is smooth.
  2. Pour in the heavy cream, vanilla, and Swerve (or sugar if you are not using Swerve.)
  3. Beat on high speed until the cream cheese mixture is thick, smooth and creamy.
  4. Fold in the strawberries and blueberries.
  5. Refrigerate until ready to serve.

Can I Make This Berry Cheesecake Salad Ahead of Time?

This Berry Cheesecake Salad can be made in advance. However, I recommend making the cheesecake mixture in advance but leave out the strawberries and blueberries when refrigerating it. Stir in the berries just before serving to keep that red white and blue color and maintaining the cheesecake texture.

Ingredients

  • 16 ounces cream cheese, softened (Two 8-ounce packages)
  • 1 cup heavy cream
  • 2/3 cup Swerve Confectioner's sweetner (powdered sugar replacement)
  • 1/2 teaspoon pure vanilla
  • 2 cups fresh strawberries, chopped
  • 2 cups fresh blueberries
