Shaved Brussels Sprouts Salad, with apples, pomegranates, parmesan, and pecans, is drizzled with a sweet and tangy apple cider vinaigrette, is crunchy and delicious.

This Salad makes a perfect Fall salad for Thanksgiving or Christmas dinner or any holiday dinner.

Years ago when My husband and I were first engaged we went out to visit his Mom in California. Some friends of hers invited all of us over for their Thanksgiving dinner.

They were serving this lovely salad with apples, pomegranate seeds, pecans, and parmesan cheese, and I loved it! My Mother-in-law’s friend was kind enough to give me the recipe and that is when I learned that it was made with shredded Brussels sprouts!

Had I known it had Brussels sprouts at the beginning, I probably would have not even tried it and would have missed out on one fantastic holiday salad. Now it has become tradition to serve this Shaved Brussels sprouts Salad at every Christmas dinner. 

What Are Shaved Brussels sprouts?

Shaved Brussels sprouts (as opposed to bearded Brussels sprouts??) 🙂 are just Brussels sprouts that have been shredded or thinly sliced. 

What Makes This Recipe Work?

  • This recipe has a delicious flavor and texture. It is crunchy, sweet, tangy, and salty, with the sweetness of the apples, crunchiness of the Brussels sprouts, apples, pomegranate seeds, and pecans, and the tangy flavor of mustard in the dressing combined with the saltiness of the parmesan cheese.
  • The shredded Brussels sprouts stay crisp like cabbage and don’t wilt or get soggy like lettuce. They hold up under the dressing and all the toppings.
  • The dressing has a delicious sweet and tangy flavor with the apple cider vinegar, mustard, and honey to really enhance the flavor of the overall salad.

How Do You Shave Brussels sprouts?

You take the razor and start at the top of the Brussels sprout and carefully pull the razor down on the side of the Brussel sprout. (Just kidding, Just kidding!)  No razors are involved in the shaving of Brussels sprouts. 

The easiest and fastest way to shred (or shave) Brussels sprouts is to use your food processor. If you don’t have a food processor then you can use a mandolin to thinly slice each Brussel sprout. If don’t don’t have either of those, then you can use a sharp knife and thinly slice each Brussel sprout. 

Can I Shred Brussels Sprouts Ahead of Time?

While I like to keep the Brussels sprouts whole until just before serving to be sure the shreds stay in tact, you can shred Brussels sprouts in advance, like the night before. However, I would not recommend shredding them more than 48 hours in advance of when you are going to serve them.

Why Would You Eat Raw Brussels Sprouts?

The answer is because when you shred the Brussels sprouts and cover them with the Apple Cider Vinaigrette or other dressing, they absorb the flavor, yet are still crisp without wilting and taste delicious! Not to mention that Brussels sprouts are pretty darn good for you as Healthline.com describes in easy to understand language.

Shredded Brussels sprouts Salad

  • Brussels Sprouts, Shredded
  • Chopped Apples
  • Pomegranate Ariels 
  • Chopped Pecans
  • Shaved Parmesan

Apple Cider Vinaigrette Dressing

  • Olive oil
  • Apple cider vinaigrette
  • Spicy Brown Mustard
  • Honey
  • Minced Garlic
  • Italian Seasoning
  • Salt and Pepper

Directions

  • Make the Apple Cider Vinaigrette
    • In a small bowl stir together all ingredients under Apple Cider Vinaigrette Dressing. Set aside.
  • Make the Salad
    • Toss together shredded Brussels Sprouts, and the rest of the ingredients in a large bowl.
    • Drizzle Apple Cider Vinaigrette all over the salad and toss so that all ingredients are covered with the dressing.
    • Either serve immediately or cover and refrigerate until ready to serve.

Recipe Tips

  • If you are having a party, you can make this salad several hours in advance and store covered in the refrigerator.
  • Save time by using a food processor to shred the Brussels Sprouts.
  • If you can’t find Pomegranate Ariels or seeds, then you can use dried cranberries instead.

  • Can I Make This In Advance?
    • Yes. You can make this salad in advance and even cover the salad with the dressing and then let it sit covered in the refrigerator several hours before serving. However, I would not recommend making more than 1 day in advance.
  • How Do I Store Leftover Shaved Brussels sprouts Salad?
    • Cover with a lid or with plastic wrap and refrigerate for up to 2 days.

Ingredients

Shaved Brussels Sprouts Salad

  • 1 pound brussels sprouts, shredded
  • 1/2 cup pomegranate seeds
  • 1 apple, chopped
  • 1/2 cup chopped pecans
  • 1/4 cup shaved parmesan cheese

Apple Cider Vinaigrette

  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 teaspoons spicy brown mustard (or any type of mustard)
  • 1 teaspoon minced garlic (about 1 clove)
  • 1/4 teaspoon Italian Seasoning
  • Salt and pepper
  • 2 tablespoons Honey

Shaved Brussels Sprouts Salad

  • Toss all ingredients under Shaved Brussels Sprouts Salad above.
  • Pour Apple Cider Vinaigrette dressing over the top of the salad and toss so that the dressing covers all the salad.
