How to Cook Beef Tips (With Rice)
We loved these savory Beef Tips and Rice for a hearty weeknight dinner! My elderly mother-in-law tells me she does not like beef. However, when I served her these Beef Tips and Rice for dinner the other night, and she loved it.
What Are Beef Tips?
Beef Tips are small cuts of meat that are often cut from sirloin or chuck roast. However, they can be from any cut of meat. They are then cooked in a dutch oven or slow cooker and usually served with brown gravy over mashed potatoes or rice.
What Makes This Beef Tips And Rice Recipe Work?
What I love about these Beef Tips and Rice is that they are easy to make. I made them after work and had dinner on the table in a little over an hour.
I cooked the beef tips in a dutch oven and browned them on all sides first. Then I added the onions and green bell peppers to saute and add flavor and cook for about 5 minutes. Then I added minced garlic, Worcestershire sauce, and beef broth and let simmer. Made a gravy with the leftover liquid and then had the beef tips served over rice. What type of beef to use?
I’m glad you asked. Typically a Beef Tips recipe calls for sirloin tips or tenderloin tips but many use beef stew meat, which is what I did because that is what was available at my local grocery store.
Are beef tips and stew meat the same?
Beef Tips are cut usually from a tenderloin or sirloin and are naturally tender and will cook up quickly. Whereas, beef stew meat is often cut from the shoulder and usually requires braising before becoming tender.
What Ingredients Do I Need To Make Beef Tips and Rice?
- 3 pounds top sirloin cut into 1-1/2 inch cubes (or use stew meat). You could also cut up a chuck roast.
- 2 tablespoons oil
- Freshly cracked black pepper to taste
- Sea Salt to taste
- 1 teaspoon Italian seasoning
- 1 teaspoon cumin
- 1 onion sliced
- 1 green bell pepper sliced
- 1 cup sliced cremini mushrooms
- 2 teaspoons minced garlic*
- 1/4 cup Worcestershire
- 3 cups reduced-sodium beef broth**
- 1-1/2 cups cooked rice
*If you don’t have minced garlic, you could use 1 teaspoon of garlic powder instead.
**If you want more depth of flavor substitute 1 cup of red wine for 1 cup of beef broth. The red wine adds richness to the flavor.
How To Make Beef Tips and Rice?
- In a Dutch oven over medium-high heat, add oil.
- Season beef tips with salt, pepper, Italian seasoning, and cumin.
- Add the seasoned beef tips to the hot pan and cook until browned.
- Add the sliced onion, bell pepper, and mushrooms. Cook for about 5 minutes.
- Reduce heat to low.
- Add the minced garlic and cook for about 1 minute.
- Pour in the Worcestershire sauce and the beef broth.
- Let it simmer for about 1 hour.
- Serve over cooked rice.
Can I Make Gravy From The Drippings?
Yes! Once the beef tips have completed cooking, you can remove them and then make a cornstarch slurry with 2 tablespoons of water and 2 tablespoons of cornstarch, and then add that to the liquid in the pot. Stir and let it simmer on low for about 5 minutes and the liquid should thicken to make a very nice gravy.

Beef Tips and Rice Recipe
Ingredients
- 3 pounds top sirloin cut into 1-1/2 inch cubes (or use stew meat)
- 2 tablespoons oil

Instead of using a dutch oven put everything, except the rice, in a crockpot and either cook on High for 3 – 4 hours or on low for 5 – 7 hours.

Hi Robyn, yes, I like to brown the beef first. It is not required but I like the flavor when it is seared before going in the slow cooker.

Is that Sirloin you’re chopping up in the video? Do I buy that in ‘steak form’ or what? If I want to make this for about 12-15 people, that would be a lot of meat, eh? I don’t think I have ever seen that size Sirloin in the meat section. I really want to try this, but I’m afraid of choosing the wrong kind of meat (especially for a new recipe). Also, the Italian seasoning….that’s not an Italian dressing mix, is it? I guess McCormick’s sells it? I have just never had a need to use it before. Thanks in advance.

Hi Annie, no worries. You got this. You can use either a sirloin roast or steak and then cut into cubes or have the butcher at the beef counter cut it into cubes for you. If you click on the # of servings in the recipe card above, it will adjust the amount of the ingredients that you need. So for 12 – 15 people, it shows that you would need between 4.5 lbs and 5.75 lbs of beef. The Italian seasoning is not the same thing as Italian dressing mix. It is a seasoning blend, and I believe McCormick’s does sell it. You will find it on the spice aisle in most grocery stores.

Hi Sharon, your description of the Loaded Beef Tips includes all the same ingredients as this recipe. The only thing missing is the Mozzarella cheese. I recommend just adding the mozzarella cheese to this recipe, with the bell peppers and onions and you would have it.

Hi Cindy, I don’t think I covered mine, but it is usually a standard practice to cover it while simmering. Either way should be fine.

Hi Kazy,
This beef is braised for an hour in the liquid so it will not be rare. In doing so the beef becomes very tender and it adds flavor to the gravy. I have not made it so it is rare. However, my recommendation is to brown the beef tips to how you like them and then add to the sauce during the last few minutes of cooking based on how rare you like it. Maybe in the last 5 to 10 minutes. However, since the gravy will not have the beef cooking with it, you may want to add a beef gravy mix to the sauce when you first start the sauce to give the sauce more beef flavor. I hope that helps.

Am making tonight.The only comment I have is that 1-1/2 cups of Cooked rice doesn’t seem anywhere near enough for the multiple servings made in this recipe.I’m assuming it should be that amount of rice per serving

The recipe calls for 3 cups beef broth. However, if I substituted red wine for the beef broth which is only 1 cup would I still need the two cups of beef broth?
