In this fresh, quick and easy side dish, I add fresh lemon juice, fresh asparagus, and a little asiago cheese (my favorite) to Minute® Whole Grain Brown Rice. The lemon and asparagus as some fresh natural flavors, and the asiago cheese adds that unique nutty salty flavor to the taste of the rich, nutty whole grain brown rice. In addition to being delicious and wholesome, the whole grain and fresh vegetables really fill me up, which is key when trying to eat healthier. This is why I keep Minute® Whole Grain Brown Rice in the pantry. I know I can have the delicious wholesome whole grain brown rice ready in only 5 minutes!

Lemon Asparagus Asiago Brown Rice
Ingredients
- 2 cups Minute® Whole Grain Brown Rice uncooked
- 1-3/4 cups reduced sodium chicken broth
- 2 tablespoons lemon juice
- 1/2 pound fresh asparagus cut into 2-inch lengths
- 1/2 cup shredded asiago cheese
Instructions
- In a medium pan over medium high heat, bring chicken broth and lemon juice to a boil.
- Stir in Minute® Whole Grain Brown Rice; Return to boil. Reduce heat to low; cover and simmer 5 MINUTES.
- Meanwhile in aa separate pan add asparagus t boiling water for 3 - 4 minutes. Drain
- REMOVE from heat and stir; cover. LET stand 5 MINUTES or until water is absorbed. Fluff with fork. Stir in asparagus and asiago cheese. Serve hot.
