I have given the traditional 7-layer dip a twist by using authentic Mexican Cacique® Cheeses, flavored sour cream, and chorizo to add authentic Mexican flavors to an easy dip recipe and turned it into a fun Halloween party dip.
What is In Graveyard 7-layer Mexican Dip?
Graveyard 7-layer Mexican Dip includes the following ingredients, layered one on top of the other in a 9×13 baking dish. Rectangular tortilla chips are then placed vertically in the dip to look like tombstones.
- Refried Beans
- Cacique® Ranchero® Beef Chorizo
- Guacamole
- Cacique® Cilantro Lime Mexican Style Sour Cream
- Chopped Tomatoes (I used this pico de gallo recipe.)
- Sliced Black Olives
- Cacique® Cotija Cheese
- Chopped Cilantro (to garnish)

The Cacique® Ranchero® Beef Chorizo, a seasoned sausage with an authentic blend of herbs and spices, adds so much amazing flavor to the 7-layer dip. It was incredible to me how much more flavorful the dip was compared to just the standard dip with refried beans only.
To offset the bold, spicy flavor of the Ranchero® Beef Chorizo, I decided to use the Cacique® Cilantro Lime Mexican Style Sour Cream, which was very flavorful but not spicy. The convenient squeeze bottle made it so easy to add to the dip. You could easily add that to other dips and easily make a spider web design for Halloween. That would be fun.
For the cheese, I changed up the traditional 7-Layer Dip by using Cacique® Cotija Cheese, which is a robust, strong-flavored aged cheese, with a dry, salty, granular texture, and similar in flavor to parmesan or feta.
Variations on Graveyard 7-Layer Mexican Dip
Cacique® makes it easy to create variations on this dip because they offer such a variety of flavors of cheeses, sour creams, and chorizos. Below are examples of some of the flavors offered.
Create variations of the Graveyard 7-Layer Dip by using one of the different varieties of chorizo, sour cream, or cheese.
Chorizo:
- Cacique® Beef Chorizo – combines beef with an authentic blend of herbs and spices for that bold chorizo flavor. I chose to use this chorizo in this recipe because I love the beef flavor with the herbs and spices.
- Cacique® Soy Chorizo – is a great vegetarian option if you are looking for a heart-healthy option but still want the robust flavor of chorizo.
- Cacique® Pork Chorizo – uses rich spices and herbs that are unique to the authentic chorizo made in Mexico, to create an unparalleled depth of flavor.
Crema Mexicana:
- Cacique® Crema Mexicana Agria Sour Cream – is a thick, buttery, full-flavored Grade A sour cream with a perfect balance of heavy cream flavor and a slight acidic tang. Pour or dollop on savory dishes. This could be another option for the sour cream layer in the Graveyard 7-Layer Mexican Dip.
- Cacique® Crema Mexicana Table Cream – is a neutral table cream that has a pourable, rich, silky texture. Drizzle or dollop over dishes.
Flavored Sour Cream:
- Cacique® Chipotle Mexican Style Sour Cream – is a Mexican-style sour cream infused with the flavor of smoky, fire-roasted Chipotle. Just squeeze it on top of your favorite taco, wings, or dip. The squeeze bottle makes it super easy to use.
- Cacique® Cilantro Lime Mexican Style Sour Cream – is a Mexican-style sour cream infused with zesty Cilantro and tangy Lime flavor. I chose to add this delicious Cacique® Cilantro Lime Mexican Style Sour Cream to the Graveyard 7-Layer Mexican Dip because I thought the flavor complemented the other flavors in the dip without being too spicy.
- Cacique® Spicy Jalapeno Mexican Style Sour Cream – is a jalapeno-flavored sour cream that balances perfectly the jalapeno flavor and spicy heat.
Cheese:
- Cacique® Oaxaca Part-Skim Milk Cheese – (pronounced Wuh-HAH-kuh) – is a semi-soft, white artisan cheese made from cow’s milk, similar to Mozzarella but with a better “melt.” This cheese could be added directly on top of the refried beans-chorizo mixture and heated to melt the cheese before adding other toppings. Or it could be shredded and added to the top of the casserole for a different flavor and texture.
- Cacique® Panela Part-Skim Milk Cheese – is a mild, curd-style cheese, and is similar to Queso Fresco but is slightly less crumbly. You could crumble this cheese on top of the Graveyard 7-Layer Mexican Dip for a different flavor variation.
- Cacique® Cotija Part-Skim Milk Cheese – named after the town of Cotija has a strong, salty flavor. I chose to use Cotija in this recipe, but you could easily change it up to your favorite Cacique® cheese.
- Cacique® Manchego Part-Skim Milk Cheese – Cacique®’s Manchego has a nutty flavor and thick, creamy texture. It has the tangy taste of a Colby. Shred this cheese and add it to the top of this dip or slice or cube to serve with fruit or crackers.
- Cacique® Queso Fresco Part-Skim Milk Cheese – is traditionally used to balance rich, spicy dishes, either as a topping or a stuffing cheese. Crumble on top of the Graveyard 7-Layer Mexican Dip, especially if you choose to use one of the Cacique® chorizos, or the Cacique® Spicy Jalapeno Mexican Style Sour Cream in the dip.
How To Make Graveyard 7-Layer Mexican Dip?
This Graveyard 7-Layer Mexican Dip is really easy to make. Just layer the ingredients into a 9×13 baking dish.
First Layer: Chorizo and Refried Beans.
- Cook your favorite Cacique® Chorizo per package instructions.
- In a bowl, mix together 1/2 a package of cooked Cacique® Beef, Soy, or Pork Chorizo with a 16-ounce can refried beans.
- Spread the refried bean – chorizo mixture on the bottom of a 9×13 pan.
Second Layer: Guacamole layer.
Spread the prepared guacamole over the top of the refried beans – chorizo layer. Use store-bought guacamole or make your own guacamole.
Third Layer: Squeeze a bottle of Cacique® Cilantro Lime Mexican Style Sour Cream (or your favorite Cacique® Mexican Style Sour Cream) over the top of the guacamole layer.
Fourth Layer: Sprinkle chopped tomatoes or your favorite Pico De Gallo over the top.
Fifth Layer: Sprinkle a can of drained, sliced black olives over the top.
Sixth Layer: Sprinkle your favorite Cacique® cheese, such as the Cacique® Cotija Part-Skim Milk Cheese that I used.
Seventh Layer: Sprinkle chopped cilantro evenly over the top of the dip.
For tombstones, just before serving, stand up rectangular shaped tortilla chips vertically into the dip to look like tombstones.
Either serve immediately or refrigerate (prior to adding chips) until you are ready to serve.
This Graveyard 7-Layer Mexican Dip is so easy to make, especially when Cacique® has such a variety of chorizo, sour creams, and cheeses to add that savory Mexican flavor.

Ingredients
- 1 (16-ounce) can refried beans
- 4-1/2 ounces (1/2 package) Ranchero® Beef Chorizo
- 2 cups prepared guacamole
- 1 (12-ounce) package Cacique® Cilantro Lime Mexican Style Sour Cream
- 1 cup chopped tomatoes or pico de gallo
- 1 (2.25-ounce) can sliced black olives
- 1/2 (10-ounce) package Cacique® Cotija Cheese
- 1/2 cup chopped Cilantro
Instructions
First Layer: Chorizo and Refried Beans
- Cook your favorite Cacique® Chorizo per package instructions.

- Sprinkle chopped cilantro evenly over the top of the dip.
Tombstone Halloween Decorations
- For tombstones, just before serving, stand up rectangular shaped tortilla chips vertically into the dip to look like tombstones.Either serve immediately or refrigerate (prior to adding chips) until you are ready to serve.
