- 3 lb Chuck Roast
- Salt and pepper to taste
- 1-1/2 cups Baby Carrots
- 2 lbs potatoes cubed
- 1 onion roughly chopped
- 2 cups beef broth (or beef bone broth)
- 2 Tablespoons Worcestershire
- 2 Tablespoons homemade taco seasoning or a little over half a store bought packet
- 3 Tablespoons ranch seasoning
- 1 Tablespoon Italian seasoning
Instructions
Make The Seasoning Rub: In a small bowl, combine the salt, pepper, taco seasoning, ranch seasoning and Italian or Greek Seasoning. Rub the seasoning mix all over the roast.
Sear The Roast: Heat oil in a large skillet over medium-high heat. Once hot, sear the roast for 2-3 minutes per side until browned.
Add To Slow Cooker: Place the roast in the bottom of a 6-quart Crockpot. Add potatoes, carrots, and onion around and on top of the roast.
Add Liquid: In a bowl or measuring cup, whisk together the beef broth and Worcestershire sauce. Pour evenly over the roast and veggies.
Cook Low and Slow: Cover and cook on LOW for 8-10 hours or HIGH for 4-5 hours, until fork-tender and falling apart.

My chuck roast is only 2.27 lbs. how much of the seasoning would you use for this size roast?

My roast is just under 2 pounds and I used all the same amounts as stated but I mixed them all together, patted to roast dry then covered the roast in the spices and rubbed them in and seared the roast. I then mixed the remaining spices, Worcester’s sauce, added soy sauce and ised 1 can of beef consume soup and 1 can of French onion soup instead of the beef broth. Mixed that all together, added some corn starch and put the mixture in the hot pan from searing the roast(don’t clean it first). Heated it until it boiled and thickened a bit then poured it over the roast and veggies.

Adjust the servings to 6 servings, which will be 2.25 lbs of chuck roast, using the slider near the top of the recipe card (just above the comments), and it will adjust all the amounts of the other ingredients. For example, instead of 2 tablespoons of taco seasoning, you would use 1.5 tablespoons.

I have approximately a 1.5 pound chuck roast. Are there any adjustments I need to make to the recipe? For example, should I cut the broth back? Should I cook it for the same amount of time? Thank you!

I’m glad you asked the question. You will be basically cutting the recipe in half. Currently the recipe is written for 3 lbs for 8 servings. At the top of the recipe card, which is just above the comments, if you hover over the number of servings, a slider will appear. You can slide the bar to the left to reduce the servings to 4 servings, and then it will automatically adjust the measurements of each ingredient so you know how much of each ingredient to use.
