- Step 1: Seasoning Rub – In a small bowl, mix taco seasoning, ranch seasoning, Italian seasoning, salt, and pepper. Rub this spice blend all over the chuck roast.

- Step 2: Heat oil in a large skillet over medium-high heat. Once hot, sear the roast for 2-3 minutes per side until browned.

- Step 3: Place the roast in the bottom of a 6-quart Crockpot. Add potatoes, carrots, and onion around and on top of the roast.

- Step 4: In a bowl or measuring cup, whisk together the beef broth and Worcestershire sauce. Pour evenly over the roast and veggies.

- Step 5: Slow cook LOW for 8-10 hours or HIGH for 4-5 hours. I recommend cooking on low for the most tender roast.

- Step 6 – Let the roast rest about 5-8 minutes and then using 2 forks shred the roast.

- 2 Tablespoons olive oil
- 3 lb Chuck Roast
- Salt and pepper to taste
- 1-1/2 cups Baby Carrots
- 2 lbs potatoes cubed
- 1 onion roughly chopped
- 2 cups beef broth (or beef bone broth)
- 2 Tablespoons Worcestershire
- 2 Tablespoons homemade taco seasoning or a little over half a store bought packet
- 3 Tablespoons ranch seasoning
- 1 Tablespoon Italian seasoning
Instructions
Make The Seasoning Rub: In a small bowl, combine the salt, pepper, taco seasoning, ranch seasoning and Italian or Greek Seasoning. Rub the seasoning mix all over the roast.
Sear The Roast: Heat oil in a large skillet over medium-high heat. Once hot, sear the roast for 2-3 minutes per side until browned.
Add To Slow Cooker: Place the roast in the bottom of a 6-quart Crockpot. Add potatoes, carrots, and onion around and on top of the roast.
Add Liquid: In a bowl or measuring cup, whisk together the beef broth and Worcestershire sauce. Pour evenly over the roast and veggies.
Cook Low and Slow: Cover and cook on LOW for 8-10 hours or HIGH for 4-5 hours, until fork-tender and falling apart.
Rest and Serve: Let the roast rest 10 minutes before shredding so the juices stay put. Serve with veggies and spoon extra gravy on top.

Hi Megan, you can cook it on high for 4 hours in your crockpot instead. If that is too long for you, then I would suggest some of our other beef recipes, such as Instant Pot Beef Stew (about 1 hour), or check out our 30-minute recipes instead.

Yes you can use 4 cups. The seasoning may more subdued with the extra liquid. So you may want to add a little extra seasoning.

Does the sauce here thicken on it own? It looks very thick in the photos but there’s no thickening agent in the recipe.

Hi Esther, you have a couple of choices. You can serve the liquid au jus so it is thin, or you can make a cornstarch slurry (2 TBLS Cornstarch & 2 TBLS Water) and add to the liquid in the Crockpot in the last few minutes and stir to thicken the liquid into a gravy.

I just wanted to say this was my first time making a chuck roast in the crock pot and I absolutely loved this recipe! The only things I left out was onions and Worcestershire sauce. I used Italian seasoning instead of Greek! I’m literally obsessed with this recipe, thank you for posting this!

How do you preven all the seasonings falling off during searing process??

Hi Kayla, before sprinkling the seasoning on the roast, you can rub the roast with olive oil first, and then sprinkle the seasoning on to help it stick better to the roast. If you prefer, sear the meat first and then add the seasoning. It will still be delicious.

I have the same question as esther: should the veggies go on the top of or under the meat?
Also, can the meat still be frozen when you put it in the crockpot, or must it be completely thawed?

Hi Peggy,
This is really a personal preference. If you place the vegetables under the meat, they will get all that wonderful flavor from the juices of the roast. However, because it cooks for a long time, the vegetables will get softer than cooking on top and may get mushy, and some people don’t like that. For firmer vegetables, place them on top of the meat. I’ll let you decide.

I’m assuming that you are using Greek Seasoning instead of Italian Seasoning, in that case, you would use the same amount as Italian Seasoning, which is 1 tablespoon.

Did you peel the potatoes?

Sometimes I do, and sometimes I don’t. If I use Yukon gold potatoes, I often leave the skin on. But if I use russet potatoes, I like to peel those because I don’t want the skin to come off of the potatoes during slow cooking. It is a matter of preference rather than a requirement. Hi Ashley,
I assume you are talking about the time it takes to brown (or sear) the roast on each side in a skillet before transferring the roast to the slow cooker. I recommend doing this on a stove top rather than in the oven. Therefore, heat a skillet over medium heat, in which the temperature would be between 325 and 375 degrees F. I would recommend only about 2 minutes per side. Therefore, it should take about a total of 8 minutes to brown all 4 sides of the roast.
