I’m sharing a fantastic Cinco de Mayo Fiesta Menu that includes a round up of Mexican inspired recipes that are perfect for your Cinco de Mayo Mexican Fiesta celebration or for any party or get-together! What is even better is that most are flavorful, spicy, and delicious without all the fat and calories! Let’s hear an Ole!

To start off this Mexican fiesta with a bang, I’m including as an appetizer these spicy Stuffed Jalapeños from Shelby of the Life and Loves of Grumpy’s Honeybunch. Don’t you just love that name of her blog? And I know you will love these spicy jalapeños, especially because they have all the flavor without all the calories!

This next dish can serve as either an appetizer or main dish.  It is my Chicken Fajita Quesadillas with Pico de Gallo Salsa.  I love to use chicken fajita meat in this quesadillas, but any cooked chicken will work, including shredded Rotisserie chicken. I highly recommend serving it with my Pico de Gallo Salsa.

We have two choices of entrees for you for this party menu.  The first is the Turkey and Zucchini Enchiladas with Verde Sauce. This is from Marion of Life Tastes Good, who made her version of these enchiladas from Renee’s Kitchen Adventures.

The second entree for this Cinco de Mayo Mexican Fiesta is my Sizzling Steak Fajitas! OMG! These sizzling, citrusy, slightly spicy beef fajitas will definitely make you say Ole! Don’t believe me? Just try them! You’ll see.

And for the pièce de résistance (Wait! That’s French.  I thought this was a Mexican Menu!) is the Skinny Tres Leches Poke Cake from Renee of Renee’s Kitchen Adventures!  When I saw Renee publish this, I knew I had to include it in a menu.  I plan on making this beautiful and delicious Tres Leches cake because it does not have all the fat and calories of the traditional version.
