Flavor Mosaic readers know that I love buffalo chicken because of all my buffalo chicken recipes, including Buffalo Chicken Stuffed Shells, Buffalo Chicken Dip, and Buffalo Chicken Pasta Salad.

This is a tried and true recipe that we often make on Friday nights for pizza night. We used to go out for the Mellow Mushroom Buffalo Chicken Pizza, but now we stay at home because we love this pizza so much!

Why You’ll Love This Recipe

  • Leftover Chicken – It’s a great way to use up leftover rotisserie chicken or other leftover cooked chicken..
  • Quick and easy – It’s so simple to make at home, and often, it tastes better than delivery. It will likely become your favorite of all the easy recipes.
  • Flavor – It has delicious bold flavors, including buffalo sauce, ranch dressing, bacon, jalapenos, and bleu cheese, which will keep both the Jalapeno Popper Pizza lovers and Buffalo Chicken Pizza lovers happy!

Below, I discuss the ingredients and possible substitutions if you don’t have a specific ingredient. • Pizza Dough – You can use store-bought pizza dough from the grocery store or your homemade pizza dough recipe.
  • Cream Cheese
  • Ranch Dressing – I used creamy ranch dressing. However, If you prefer, you could use blue cheese dressing instead.
  • Chicken – Use shredded chicken or leftover rotisserie chicken breast.
  • Bacon – You’ll want to use good quality bacon that makes nice crispy bacon on the pizza.
  • Jalapenos – If you don’t want to use spicy jalapenos, you could use jarred jalapeño slices, bell peppers, such as red and green peppers, or green onions instead.
  • Buffalo Sauce – Use a spicy buffalo sauce, like Frank’s Red Hot Sauce.
  • Cheddar Cheese
  • Mozzarella Cheese – I used shredded Mozzarella, but you could also use fresh mozzarella
  • Bleu Cheese – Use a good quality bleu cheese to be crumbled on top.

Crushed red pepper is scattered on the right side, with a small jalapeno, and a small glass bowl of blue cheese at the bottom of the photo.

Recipe Tips

  • Less Spicy – To make the jalapenos less spicy, be sure to remove the seeds from the jalapenos. The seeds make the jalapenos spicy. Therefore, removing them makes the jalapenos less spicy.
  • Additional Toppings – You can add additional toppings if you wish, such as sliced red onion, chopped black olives, or chopped green peppers.
  • Drizzle – If you like, drizzle a little olive oil over the top of the pizza.

Variations

  • Mushroom Buffalo Chicken Pizza – Add portobello mushrooms or any type of mushrooms.
  • BBQ Chicken Pizza – Instead of Buffalo Chicken, you could use BBQ chicken instead with your favorite barbecue sauce.

What To Serve With Pizza

  • Chopped Vegetable Salad
  • Air Fryer Honey Hot Wings – Chicken Wings with a delicious sauce.
  • Cheese Focaccia Bread
