Greetings from the Gridiron Guru.

Last week’s football games were very exciting with some huge upsets. Who would have thought that Florida State, ranked number 2 prior to the game, would get throttled by 43 points by Louisville? My Texas Aggies edged past Auburn 29 – 16 with a 4th quarter  touchdown drive.

The University of Houston overpowered Cincinnati 40-16. The final score really did not indicate the real story of the game with Cincinnati staying with Houston until two late Cincinnati turnovers resulting in two Houston touchdowns.

Slow Cooker Pulled Pork Sandwiches Recipe by Flavor Mosaic

In other gridiron action, the Washington Huskies, Florida Gators, and Ohio State Buckeyes each won in convincing fashion.

This week I would like to focus on the Big 10 Conference which has a rich history with many of their own traditions.  They had the huge rival games of Ohio State vs Michigan, Wisconsin vs Penn State and many others.

Speaking of the Big Ten, the northwestern Wildcats will be hosting the Nebraska Cornhuskers in Chicago. This game should spark more interest than the first two games that the Chicago Bears played this season.

Pico De Gallo Salsa v2-4

The gridiron action gets going with #11 Wisconsin at #8 Michigan State and Iowa Hawkeyes traveling to new york area to take on the Rutgers Scarlet Knights. Finally, Penn State travels to “The Big House” to take on Michigan Wolverines.

In conclusion, this weekend’s gridiron action should prove who are the top teams this season while some head coaches may need to start updating their resumes.

However, no matter who wins or loses, we will enjoy the tailgating parties while we watch all the Gridiron battles. This week we will be enjoying some spicy Easy Pulled Pork nachos.

Easy Pulled Pork Nachos by Gridiron Grub Guru

These Easy Pulled Pork Nachos by Gridiron Grub Guru with barbecue sauce, tortilla chips, and melted cheese are delicious and easy to throw together for a gameday party.

Ingredients

  • 1/2 pound Prepared Pulled Pork
  • 1 cup barbecue sauce
  • 24 tortilla chips
  • 2 cups shredded Mexican Cheese
  • 1/4 cup pico de gallo
Prevent your screen from going dark

Instructions 

  • In a medium bowl mix add the pulled pork and barbecue sauce. Stir to cover all the pork in barbecue sauce.
  • Spread the tortilla chips evenly on a large plate or serving platter.
  • Cover the chips with pulled pork.
  • Sprinkle shredded cheese evenly over the top.
  • Microwave for about 90 seconds to heat and melt cheese. (Microwaves vary, so time may need to be adjusted.)
  • Spoon some pico de gallo over the top of the nachos and serve hot.

    These sound scrumptious. Tacos are a great anytime food. There is a restaurant here that make pulled pork tacos, but they sure don’t look this delicious. Thanks for the recipe! I’ll make them at home from now on,

    Nachos are my love language – these look amazing! I am not really a college football fan, but every Sunday we have friends over to watch the NFL. They will love these nachos!
