Crock Pot Hawaiian Pork Chops are slow-cooked to tender pork chop perfection and infused with a sweet and tangy Hawaiian Sauce, which is a flavorful Pineapple Barbecue Sauce that is combined with pineapple slices, red bell peppers, garlic, and ginger for an easy weeknight dinner on busy weeknights.

This Hawaiian Pork Chop recipe has a unique difference from other Crockpot Hawaiian Pork Chop Recipes, making it one of our favorite Pork Recipes and Slow Cooker Recipes!
Instead of adding ketchup or tomato sauce, I add my favorite BBQ sauce and hot sauce, like Tabasco, or Sriracha to add a little spicy heat. No worries if you don’t like the spice because you can leave out the hot sauce if you don’t like it spicy.

- Pork chops – Use boneless pork chops that are at least ¾ to 1 inch thick to prevent them from drying out. Thin-cut chops can overcook quickly and become tough, while thick pork chops will result in tender pork chops after slow cooking.
- Soy sauce – I recommend using a reduced-sodium soy sauce to prevent the sauce from being too salty. If you don’t have soy sauce, use Tamari, Coconut Aminos, or Worcestershire sauce.
- Barbecue Sauce: Use your favorite BBQ Sauce for the sweet and tangy sauce.
- Hot Sauce (Optional): Add a little hot sauce, like Tabasco or Sriracha to add some spicy heat. However, if you don’t like it spicy, leave it out. If you don’t have either of those, add some crushed red pepper instead.
- Pineapple – Canned pineapple is convenient, but if you have fresh pineapple, you can use fresh pineapple slices and add a little extra liquid (like pineapple juice or water) to compensate for the missing juice from the can.
- Red Bell Pepper – Slice a fresh red bell pepper. Green, orange, or yellow bell peppers would also work.
- Rice vinegar – If you don’t have rice vinegar, use apple cider vinegar or lemon juice.
- Garlic – Freshly minced garlic is best, but you could use store-bought minced garlic for convenience.
- Ginger – I recommend using freshly grated ginger.
- Water – It is important to use cold water when combined with cornstarch so as not to clump when added to the hot liquid.
- Cornstarch – Used to thicken the sauce.
- Rice, green onion – For serving
How To Make Slow Cooker Hawaiian Pork

Prepare the Sauce: In a medium bowl, whisk together the soy sauce, brown sugar, BBQ sauce (or ketchup), pineapple juice (from the canned pineapple), rice vinegar, minced garlic, and grated ginger.

Assemble the Crockpot: Place the pork chops in the bottom of your slow cooker. Pour the prepared sauce over the pork chops, ensuring they are well coated.

Thicken the Sauce: In a small bowl, whisk together the water and cornstarch until smooth. Stir the mixture into the crockpot. ( You can add now or before the last 30 minutes of cooking time; either is fine.)

Add Vegetables & Pineapple: Scatter the sliced red pepper and half of the pineapple slices over the pork chops. Reserve the remaining pineapple slices for later.

Slow Cook: Cover and cook on low for 5-6 hours or high for 2.5-3 hours until the pork chops are tender. Check for doneness early so the meat doesn’t dry out.

OPTIONAL: Final Touches: Add the remaining pineapple slices and let them warm for the last 10 minutes. Or add as you plate the meat.
