Ingredients

  • 4-6 boneless Pork chops
  • 1/2 cup soy sauce
  • 1/3 cup brown sugar
  • 1/3 cup BBQ sauce (Use your favorite)
  • 3 dashes hot sauce (like Tabasco or Sriracha - OPTIONAL)
  • 1 (15-ounce) can pineapple slices with juice, divided
  • 1 red pepper sliced
  • 3 tablespoons rice vinegar or apple cider vinegar
  • 2 tablespoons minced garlic
  • 1 tablespoon freshly grated ginger
  • 1/4 cup water
  • 3 tablespoons cornstarch
  • For servings: rice green onion, sliced

Instructions

  • Prepare the Sauce: In a medium bowl, whisk together the soy sauce, brown sugar, BBQ sauce (or ketchup), pineapple juice (from the canned pineapple), rice vinegar, minced garlic, and grated ginger.
  • Assemble the Crockpot: Place the pork chops in the bottom of the slow cooker. Pour the prepared sauce over the pork chops, ensuring they are well coated.
  • Thicken the Sauce: In a small bowl, whisk together the water and cornstarch until smooth. Stir the mixture into the crockpot. ( You can add now, or before the last 30 minutes of cook time, either is fine.)
  • Add Vegetables & Pineapple: Scatter the sliced red pepper and half of the pineapple slices over the pork chops. Reserve the remaining pineapple slices for later.
  • Slow Cook: Cover and cook on low for 5-6 hours or high for 2.5-3 hours, until the pork chops are tender. Check for doneness early so the meat doesn’t dry out.
  • OPTIONAL: Final Touches: Add the remaining pineapple slices on top and let them warm through for the last 10 minutes. Or just add as you plate the meat.
  • Serve: Plate the pork chops over cooked rice, spooning the sauce and vegetables over the top. Garnish with sliced green onions. Enjoy!
