Hi! Lovely array of savory meal recipes, which have me planning some pretty great dinner ideas. I discovered your website by chance but I’m really enjoying a number of your recipes here. However, I’m curious if you have any Tex Mex Instapot dessert recipes you could share or maybe even some other creative ideas/suggestions?
Every month we get together with a decent size group of friends, ranging from 20-30 people, for a potluck style, “cook off.” The host gives us a theme, in advance, and then we all try to come up with something creative and delicious, as it is also a contest and who doesn’t want to be 1st place…? 😀
I have a talent for baking/desserts so not only do I have the assigned theme but I’ve also challenged myself to make desserts that fit the theme each time and now its just expected LOL. This month, the theme is Tex Mex. I want to try to avoid anything that would usually be labeled as a Mexican dessert and try to come up with something that would fit the label of a Tex Mex dessert but I’m drawing blanks on what to make. The other dilemma I have this month is that I will be out of town for 3 days prior to the cook off and actually arriving back the same day as the event. As it stands, if we’re lucky, we will likely arrive right on time. Best case scenario, we might have ~30 minutes to spare, at most. I’m good, but not that good LOL! Because of that, Whatever I make needs to be something that I can make several days in advance but still serve with confidence that it will be as good as something made same day (I have a reputation to uphold lol). If I need to freeze it to preserve the quality, or whatever. I can do that. With proper guidance and explicit instructions lol, I trust my husband to take it at least manage getting something out of the freezer to thaw in time.

Your get together sounds like a lot of fun. That sounds like my kind of party! Do they require your Tex-Mex dessert to be an Instant Pot recipe? I have an Instant Pot Mexican Rice Pudding, but if you can make some desserts NOT using the Instant Pot, then you’ve got more options, including Carlota di Limon, or Mexican Lime Charlotte Icebox Cake, and Churros Cheesecake or Sopapilla Cheesecake Bars, or Mexican Mosaic Gelatin, which is bright and colorful. I hope those ideas help. Let me know what you end up making.

Another option might be Pina Colada Poke Cake for a more tropical feel.
