Instant Pot Southern Deviled Eggs

These Instant Pot Southern Deviled Eggs make a delicious Easter appetizer or finger food and are super easy to make because they start with Instant Pot Hard Boiled Eggs!

What Are Deviled Eggs?

  • They are shelled hard-boiled eggs that have been cut in half and the egg yolk removed.  The egg yolks are then mashed and combined with mayonnaise, mustard, relish, salt and pepper to make a filling that is then stuffed back into each hard-boiled egg white shell.

Why Are Deviled Eggs So Popular?

  • The number one reason is that they are absolutely delicious! 
  • Secondly, they make great finger food that you can pick up with your hands and stuff in your mouth. No knives or forks required.
  • Thirdly, as if we need a third reason, they are really easy to make.
  • Fourth, they can be made ahead of time. They are a great dish to make the night before. 
  • I love to serve them for the holidays and for summer picnics. Combine them with other recipes like the ones in my 25 Memorial Day Recipes for a complete meal.

Why Are They Called Deviled Eggs?

  • They are called Deviled Eggs because they are zesty or spicy. In the late 1780s, the term devil was used to describe foods that were highly seasoned or spicy. See History.com for more information about the history of deviled eggs.

How Long To Boil Eggs For Deviled Eggs?

  • The traditional method is to boil eggs for 10 minutes for a firm egg yolk that can be used in deviled egg recipes.
  • However, in an Instant Pot or pressure cooker, pressure cook for only 5 minutes, plus the time for the natural release of pressure.

How To Make Deviled Eggs?

  • Prepare the hard-boiled eggs either in the Instant Pot, see my Instant Pot Hard Boiled Eggs for directions, or boiled in water in a pan for 10 minutes on top of the stove.
  • After boiling, let the hard boiled eggs sit for 5-minutes in an ice water bath.
  • Peel the hard-boiled eggs.
  • Cut the hard-boiled eggs in half.
  • Remove the egg yolk and place in a bowl.
  • Using a fork, mash up the egg yolk.
  • Mix in mayonnaise, mustard, relish, and salt and pepper with the egg yolks. Stir until combined.
  • Spoon the egg yolk filling into each peeled, hard-boiled egg white shell. 
  • Top with each deviled egg with chopped cilantro, parsley, or green onions, and sprinkle with paprika.

Tips For Perfect Deviled Eggs

  • Use the Instant Pot to make the hard boiled eggs. If you don’t have one, I highly recommend getting one. This is the Instant Pot that I use. Then you don’t have to worry about overcooking eggs.
  • If you make the hard boiled eggs using the traditional method, I recommend setting a timer for the boiling time so you don’t overcook the eggs.
  • Use an ice water bath to make the eggs easier to peel. 
  • If the outside of the yolk is green, then the eggs have been overcooked.
  • Make the hard boiled eggs the night before and keep refrigerated until the next day you are ready to make the deviled eggs. You make make the hard boiled eggs up to 2 days before serving.

How Long Do Deviled Eggs Last?

  • According to FoodSafety.gov, prepared deviled eggs only last 2 hours unrefrigerated. When at a party or picnic, do not leave out for more than 2 hours. Refrigerate the deviled eggs before you serve and refrigerate any leftover deviled eggs.
  • Prepared Deviled Eggs can last in the refrigerator up to two days. After that, throw them out.

How To Transport Deviled Eggs

  • Ice Chest or Cooler. According to USADAFoodSafety, use an ice chest or cooler filled with ice or frozen gel packs to transport food, including deviled eggs, and keep it safe and fresh. Below are containers that can be used to place the deviled eggs in the cooler.
  • Egg Cartons. Reuse the egg carton the eggs came in for an inexpensive way to transport deviled eggs.
  • Mini Muffin Tray. Place each egg in a muffin tin and transport. If you have 2 trays, you can place one on top to act as a lid.
  • Ice Cube Trays. Another inexpensive method to transport the deviled eggs is to use ice cube trays. 
  • Deviled Egg Carriers. Another option is to buy deviled egg carriers or make your own.
  • Assemble At Destination. Of course, an easy option is to wait to assemble the deviled eggs until you arrive at your destination.
    • Boil the eggs ahead and time and make the filling and keep refrigerated.
    • Place the hard-boiled egg white shells in a plastic zipped back and place the filling in a separate plastic bag.
    • Place both plastic bags in an ice chest or cooler.
    • When you arrive at the destination, place the egg white shells on a plate.
    • Use scissors to cut a corner off the plastic bag with the filling.
    • Squeeze the top of the plastic bag to push the filling out the bottom corner and into the hard-boiled egg white shell.
    • Repeat until all deviled eggs have been filled.

Ingredients

  • 12 eggs
  • 1/2 cup mayonnaise
  • 1 tablespoon dijon mustard
  • Dash paprika (for each deviled egg)
  • salt and pepper (to taste)
  • Chopped cilantro or green onions (for garnish)

Instructions

  • Prepare the hard-boiled eggs either in the Instant Pot, see my Instant Pot Hard Boiled Eggs for directions, or boil in water on top of the stove for 10 minutes.
  • To boil the eggs on top of the stove, place the eggs in a pan and cover the eggs with water so the water level is an inch higher than the eggs. Bring the water to a boil and then boil for 10 minutes.
  • After boiling, let the hard boiled eggs sit for 5-minutes in an ice water bath.
  • Peel the hard-boiled eggs.
  • Cut the hard-boiled eggs in half.
  • Remove the egg yolk and place in a bowl.
  • Using a fork, mash up the egg yolk.
  • Mix in mayonnaise, mustard, relish, and salt and pepper with the egg yolks. Stir until combined.
  • Spoon the egg yolk filling into each peeled, hard-boiled egg white shell.
  • Top with each deviled egg with chopped cilantro, parsley, or green onions, and sprinkle with paprika.
