Pimento Cheese Deviled Eggs Ingredients
- Hard-boiled eggs – boil your eggs or use store-bought boiled eggs instead.
- Mayonnaise – I used mayonnaise as that is what is used to make pimento cheese. However, You could use plain Greek yogurt or sour cream with cream cheese could be used instead.
- Yellow mustard – you can use Dijon mustard instead if you’re in a pinch.
- Shredded cheddar cheese – make sure to use high-quality cheddar cheese for this recipe as it will really enhance the taste of these pimento cheese deviled eggs! I like to use sharp cheddar cheese, even better extra-sharp cheddar cheese.
- Worcestershire sauce – this adds a delicious balance of sour, sweet, and spicy.
- Garlic powder – you could use garlic salt instead if you wish.
- Black Pepper – taste to test.
- Salt (Optional) – I left out the salt because the cheese and Worcestershire add salt. However, you may want to add salt to taste. I recommend starting with a 1/4 teaspoon of salt and then tasting and adjusting the amount of salt for your taste. For true salt lovers, you may want to add up to a teaspoon of salt.
- Pimentos – using chopped pimentos from a jar is great for convenience, but you could also stem and deseed the peppers yourself if you like.
- Smoked paprika – This adds a mild spice level, but you could opt for the spicy hot variety if you enjoy your food with a kick of heat. Regular paprika can be used instead, although I think the smoked paprika adds an extra depth of flavor.

- Green onion – These are optional but if you do decide to use them, make sure that you slice them thinly.

- Place the yolks in a bowl and mash with a fork.
- Add in the mayonnaise, cheese, mustard, worcestershire sauce, garlic powder, pepper and pimentos (save a few pimentos for the tops).
- Stir the pimento cheese mixture together.
- Spoon or pipe the filling into each egg white half and sprinkle with paprika.
- Add a few slices of green onion and pimentos to the tops of the eggs before serving.

- Once the eggs have boiled, allow them to sit for 15 minutes before adding them to a bowl of ice-cold water. This will make peeling the eggs that much easier.
- Using a piping bag, a cookie scoop, or even a Ziploc bag that’s been cut in the corner, is a great way to produce clean-looking pimento deviled eggs. You can also spoon the egg yolk filling into the boiled egg whites, giving you a rustic appearance.
- If you’re serving a larger crowd, double the quantities of all the ingredients in this recipe.
- If, for whatever reason, you feel that the egg yolk mixture is not thick enough for your liking, simply add in extra egg yolks. You may need to taste test and adjust the spices and seasoning when adding in additional egg yolks. Otherwise, another trick for making the filling a little thicker is to add more mayonnaise.

WHAT IS PIMENTO CHEESE MADE OF?
Pimento cheese is basically a mixture of sharp cheddar cheese, tangy mayonnaise, and sweet-spicy pimento peppers. The cheesy dip/spread is sharp, slightly sweet, and ultra-creamy – often enjoyed on crackers or sandwich bread, or enjoyed as a dip with fresh vegetables.
You’ll always find that homemade pimento cheese outstrips any store-bought version in taste and texture which is exactly why I’ve opted to make my own from scratch for these deviled eggs. Apart from the irresistible taste of freshly made pimento cheese, making your own means that you get to avoid all those nasty preservatives added to the commercial cheese spread.
HOW SHOULD I STORE PIMENTO CHEESE DEVILED EGGS?
Fully assembled pimento cheese deviled eggs should be stored in the refrigerator in an airtight container for up to 5 days.
You can also store hard-boiled eggs in the refrigerator (peeled or unpeeled) in an airtight container or Ziploc bag for up to 7 days.
I don’t recommend storing hard-boiled eggs in the freezer as this makes the egg whites rubbery. Egg yolks, however, can be stored in the freezer for 2-3 months.
CAN I MAKE THESE PIMENTO CHEESE DEVILED EGGS AHEAD OF TIME?
Your fully assembled pimento cheese deviled eggs should always be served as soon after made as possible since the condensation from the fridge can make the smoked paprika bleed and can make the sliced green onions wilt slightly.
If you do want to reduce the overall recipe time then consider making certain elements of your deviled eggs and store them in separate containers in the refrigerator the day before assembling them. This could include the egg yolk mixture and halved boiled eggs or you could simply boil your eggs and store them whole in the refrigerator a day or two prior to following this recipe.
HOW DO I EASILY PEEL BOILED EGGS?
Peeling boiled eggs can sometimes be tricky. It’s important to always use quality eggs that have been stored in the refrigerator when making deviled eggs.
Another way to assist with peeling boiled eggs is to submerge them in a bowl of ice-cold water. Crack the egg and start to peel from the tip of the egg which contains an air pocket.
CAN I BOIL MY EGGS IN A DOUBLE LAYER?
Boiling your eggs in a single layer is highly recommended. Not only will this ensure evenly cooked eggs, but it will also help prevent the eggs from cracking while boiling.
Depending on how many deviled eggs you intend to make and the size of your pot or saucepan, you may need to boil your eggs in batches to cook them in a single layer. Usually, a medium-sized saucepan can boil up to 6 eggs in a single layer.
DO I NEED A FOOD PROCESSOR FOR MIXING THE EGG YOLK MIXTURE?
No, a food processor is not absolutely necessary when making the egg yolk mixture for these pimento cheese deviled eggs unless you’re wanting a super silky smooth consistency.
Simply mashing the egg yolks with a fork together with the other main ingredients will do just fine. You may end up with a few small chunks in the mixture but that can certainly add to the charm of these pimento deviled eggs!
