Cinnamon Apple Pie Bread Pudding is a simple yet delicious dessert or breakfast that tastes like a combination of apple pie and cinnamon rolls.
A delicious, sweet bread pudding with apples, cinnamon, walnuts, and sugar drizzled with a sweet vanilla glaze that is super easy to make.
It is about this time in August when the temperatures reach 100 that I start dreaming about fall….cooler weather, fall colors, and fall foods, especially apples.
I was reading Real Housemom’s blog post where she mentioned driving to the Oregon coast when temperatures reached 100. In Southeast Texas there is nowhere I can drive to escape the heat. I could drive to the Texas Gulf coast and get a breeze to go with the 95 degree temperatures but that is about it.
So instead I cranked up the air conditioner and started baking. For me to make dessert, you know it has to be simple. I can’t decorate a cake or cupcake to save my life.
The dessert is so delicious yet so easy and budget friendly. Just bread, cream, eggs, sugar, cinnamon, apple pie filling, walnuts, and a sweet icing. It tastes like an apple pie cinnamon roll. It would be perfect for breakfast or dessert, and it will feed a crowd.
I can think of nothing better than waking up and to a serving of this Cinnamon Apple Pie Bread Pudding, with a cup of coffee. Thinking about some personalization to your coffee mugs? Shutterfly has many mug templates and patterns that can inspire you.

Cinnamon Apple Pie Bread Pudding Recipe
Ingredients
- 1 pound loaf challah bread or french bread, or cinnamon bread
- 2 cups heavy cream
- 1 cup milk
- 1/2 cup sugar
- 2 teaspoons cinnamon divided
- 5 eggs
- 2 teaspoon vanilla divided
- 1 (20 ounce can) apple pie filling (or make your own)
- 1/2 cup chopped walnuts
- 1-1/2 cups powdered sugar
- 1 tablespoon milk (adjust the amount of milk to desired consistency)
Instructions
- Preheat oven to 350° F.
- Either spray with cooking spray or grease and flour a 9×13 baking dish.
- Cut or tear bread into 1-inch bite size pieces. Spread evenly into the baking dish.
- In a medium bowl, whisk together cream, milk, sugar, eggs, 1 teaspoon cinnamon and 1 teaspoon vanilla.
- Pour mixture over bread cubes and let sit about 5 minutes.
- Spread apple pie filling over the top of the bread. Sprinkle walnuts evenly over the top.
- Bake uncovered for 50-55 minutes or until puffed and browned on top.
- Remove from oven and let cool while you mix together the powdered sugar and milk for the icing. Stir in the remaining cinnamon and vanilla to the glaze. Once the bread pudding has cooled for about 10 minutes (if you can wait that long), drizzle the icing over the bread pudding and serve.

This looks absolutely delicious Michele and those photos make me want to grab a fork and dig right in. Yum. You know me, I love the heat, and here in Ohio, we have just not had enough of it this summer for my taste! We could swap states for a few weeks? lol
Michele says
Yes. We could certainly swap states for a few weeks, but come winter, I want to be back down in Texas!

Michele, this looks positively delicious! You can’t go wrong with apples and cinnamon. We can’t escape the heat here in FL either. It is downright awful right now! I would love to be dreaming of fall, but it seems so far away. Of course, that wouldn’t stop me from enjoying this fall inspired dessert! Thanks for sharing!

Hello! If I wanted to make Cinnamon Apple Pie Bread Pudding with REAL apples, how would I do that? Thanks!
Michele says
Hi Rhonda, thanks for asking. In the ingredient list of the recipe next to where it lists the apple pie filling, I added a link to a recipe for homemade apple pie filling on Chocolate Moosey’s blog. You would need to make the apple pie filling first, and then make the rest of the recipe. I’ll also share the link here for the homemade apple pie filling: http://www.chocolatemoosey.com/2012/09/20/homemade-apple-pie-filling/

Oh this looks and sounds so good! I’ll have to remember this recipe when it’s apple season near me (and thanks for sharing my apple pie filling recipe)
Michele says
Thank you Carla! Your welcome. Your apple pie filling looked amazing!
Cb says
I’m slightly confused about step 7, since in the previous steps the bread is placed into the baking dish, the wet ingredients are poured over top of the bread, and the walnuts and pie filling are spread over top of that. So in step 7, what are you pouring into the baking dish? I want to make this, but I think I’m needing clarification first. It looks yummy.
Michele says
Hi there. You are correct in that Step 7 had an unnecessary step. I deleted it as by that step everything you need is in the baking dish. From that point, just bake it in the oven.
Claudia | The Brick Kitchen says
Wow this looks amazing! So gooey and cinnamony, and I love the walnuts studded on top – it’s almost like a cross between a decadent baked french toast and bread & butter pudding!
Michele says
It is like that. It tastes similar to a combination of an apple pie combined with a cinnamon roll.

was quite easy to make as well. Thank you for the great recipe.
Felisha says
For this apple bread pudding the recipe call for heavy cream. What type of cream?
Michele says
Hi Felisha, heavy cream is also known as whipping cream. It has a fat content between 36 and 40 percent in the U.S. and up to 48% elsewhere. I hope that helps to clarify it.
Denise says
This recipe looks amazing. I love that it uses can apple pie filling so much easier then making your own. I am making it today and just curious if I can mix the apples in to the mixture or if they have to go on top like the recipe describes? Thank you!
Michele says
Hi Denise, Do you mean adding the apples in with the bread? Yes. You could do that. If you mean mixing them in with the custard, I have not tried it, but I don’t see why not.
lianne says
hello is it possible to make this a day ahead and then stick in refrigerator before cooking?????
Michele says
Hi Lianne, Absolutely you can make this the day before! Merry Christmas.
lianne says
Thank you!!!!!

Michele says
I’m so glad everyone loved it! Thanks for letting me know.
Marie says
What is the best type of bread to use and do you leave it out to get stale?
Michele says
Hi Marie, brioche, and challah are ideal for bread pudding. If you don’t have those French bread will work well. You want an unsliced loaf of a sturdy bread that won’t turn squishy when soaked in cream and milk. The bread does not need to be stale. Actually, it is better if it is fresh and not stale.
