While the salad may sound like a lot of work, it really is easy. I used prepackaged salad greens and sliced a couple of apples. One apple would suffice but I wanted the different colors on my salad, and I added some pomegranate seeds. Then I added a touch of the Lime Garlic Vinaigrette, which I had made earlier, and I had a complete meal.

Apple Pomegranate Side Salad

▢ 1/2 cup mixed salad greens
▢ 1/2 apple sliced
▢ 1 tablespoon pomegranate seeds

Lime Garlic Vinaigrette

Instructions

Add the salad greens on a plate or in a small bowl. Top with the sliced apple and pomegranate seeds.
To make the Lime Garlic Vinaigrette, stir together all the ingredients for the vinaigrette in a small bowl.
Drizzle over the Apple Pomegranate Salad.
