The other night Dave had a business meeting, and I only had time for a quick meal myself before I had to head out the door for an event. I pulled out the LEAN CUISINE® MARKETPLACE Cheese and Fire Roasted Chile Tamale and quickly made this The Apple Pomegranate Side Salad with Lime Garlic Vinaigrette.
While the salad may sound like a lot of work, it really is easy. I used prepackaged salad greens and sliced a couple of apples. One apple would suffice but I wanted the different colors on my salad, and I added some pomegranate seeds. Then I added a touch of the Lime Garlic Vinaigrette, which I had made earlier, and I had a complete meal.

- ½ cup mixed salad greens
- ½ apple, sliced
- 1 tablespoon pomegranate seeds
- 1 Tablespoon olive oil
- 1 Tablespoon lime juice
- ⅛ teaspoon minced garlic
- 1 Tablespoon honey
- Salt and Pepper to taste
- Add the salad greens on a plate or in a small bowl. Top with the sliced apple and pomegranate seeds.
- To make the Lime Garlic Vinaigrette, stir together all the ingredients for the vinaigrette in a small bowl.
- Drizzle over the Apple Pomegranate Salad.
