Lemon Parmesan Spinach Risotto is a creamy, savory Italian Risotto side dish, made with arborio rice, fresh baby spinach, lemon juice, and parmesan cheese!

Lemon Parmesan Spinach Risotto

This Lemon Parmesan Spinach Risotto is my contributor post this month to the Real Housemoms’ blog, an awesome blog with not only recipes, but articles on DIY, crafts, cleaning and organization, make-up and fashion, you name it. I am so thankful to be part of a wonderful group of bloggers who contribute to this site.

However, let’s get back to the Lemon Parmesan Spinach Risotto. It is a fantastic spring side dish that will go with just about any main dish you serve. I love to serve it with our Best Chicken Parmesan Recipe.

What makes this recipe so wonderful is that the risotto becomes creamy as it cooks and absorbs the lemon flavor. Then the fresh baby spinach delicately wilts into the creamy risotto, and the parmesan cheese slowly melts into it, creating a creamy, cheesy and flavorful pasta-like rice dish.

Need a side dish to go with seafood, make Lemon Parmesan Spinach Risotto. How about a side dish (other than pasta) to go with that Chicken Parmesan? The answer is Lemon Parmesan Spinach Risotto. It goes so well with so many main dishes, I think you should make it all the time.

One of the other things I love about this Lemon Parmesan Spinach Risotto is how easy it comes together. All ingredients go into one pot, and then the flavors slowly develop and the creamy, cheesy, goodness makes it a favorite comfort food of ours. I love one pot recipes because it makes it easy, and saves time on clean-up, and makes mama happy, and we all know how important that is!
