This Green Chile Chicken Pasta is a rich and creamy, spicy and savory Southwest style pasta dish with green chiles, chicken, and corn that makes a delicious weeknight meal or an impressive gourmet dinner.
This Green Chile Chicken Pasta was inspired by a cool restaurant in downtown Austin. My husband and I were in town for a blogger convention and tried this restaurant because we had heard other people rave about it, and it was within walking distance of where we were staying.
One of the restaurant’s specialties is a Green Chile Chicken Mac and Cheese pasta bowl. It is a rich and creamy mac and cheese with a Southwestern flair. To me, that is the best kind of comfort food. Whenever I have to travel internationally, when I come home, I crave comfort food, usually with a Southwestern or Texas twist.
I wish I could say that the chef came out and gave me his recipe, but I had no such luck. However, I did not let that deter me. I went ahead and made my own version of their dish, and the result was this Green Chile Chicken Pasta dish.
To make this Green Chile Chicken Pasta, I used high-protein pasta. You’ll need pasta with excellent consistency, texture, and flavor since it uses the highest quality wheat and is high in protein.

For the other ingredients for this Green Chile Chicken Pasta, you will need cooked chicken, corn, chopped red and green bell peppers, chopped onion, minced garlic, cheese, cilantro, and, of course, green chiles.
If you have the time, you could roast green chile peppers. However, since I needed a quick and easy weeknight dinner, I used the canned green chiles to save time.
Start by cooking rotini pasta. Then rinse and drain the cooked pasta. Then saute the vegetables, and then start the rich and creamy cheese sauce.
This sauce is awesome! It adds so much rich flavor to the dish.
This Green Chile Chicken Pasta is one of my favorite dishes for leftover chicken, like Blackened Chicken or Oven Baked Chicken. It would work well with leftover turkey as well.
The final dish of Green Chile Chicken Pasta, as prepared, makes a lovely presentation. I like to garnish it with chopped cilantro.

Green Chile Chicken Pasta
Ingredients
- 1 16 ounces Rotini Pasta
- 1 tablespoon olive oil
- 1 teaspoon minced Garlic
- 1/2 onion chopped
- 1 red bell pepper chopped
- 1 green bell pepper chopped
- 1 cup corn
- 1 can chopped green chiles
- 1 cup shredded cooked chicken
- 1 cup chicken broth
- 2 cups Heavy Cream
- 1-1/2 cups shredded Monterey jack cheese
- Salt & Black Pepper to taste
Instructions
- Cook the La Moderna Rotini pasta per package directions. Rinse, drain and set aside.
- In a large skillet over medium-high heat, add olive oil.
- Add onions, red and bell pepper, corn, and garlic and saute until onions are translucent. Add chicken and green chiles. Season with salt and pepper.
- Add shredded cooked chicken and chicken broth. Add heavy cream and reduce heat.
- Add the La Moderna Rotini and toss.
- Stir in cheese and cilantro.
- Enjoy!
