Blueberry Gorgonzola Farmer’s Salad is a crisp summer salad made with fresh Florida blueberries, corn, and tomatoes and creamy gorgonzola cheese with grilled chicken that is perfect for lunch or dinner.
I love summer! Mainly I love all the fresh summer produce available this time of year, such as the Fresh from Florida blueberries, corn, tomatoes, as well as watermelon, strawberries, and even seafood. Previously I shared some of my favorite recipes using Fresh from Florida produce, and the Fresh From Florida website has some excellent recipes as well.
However, today I’m sharing this fabulous fresh summer salad called Blueberry Gorgonzola Farmer’s Salad that I made earlier this week. It really takes advantage of the Florida produce by using blueberries, fresh corn, and tomatoes.
Last month I had the wonderful opportunity to visit my family and several members of my online foodie family in Florida. I attended the Food Wine Conference in Orlando. I had an incredible time.
I loved meeting all my online foodie friends in person and hearing their voices for the first time. Even though we met in person for the first time, I felt like I was with old friends that I have known for years because we have gotten to know each other online over the years through blogging.
One of the other benefits of visiting Florida was getting to try all the fabulous Florida summer produce and seafood. At the conference we actually got to meet and hear from local farmers and seafood producers about the care and attention they give to ensure quality produce and seafood. Most were family owned, and all worked very hard and took pride in quality of their produce.
We all got to taste and take some fresh blueberries. We had an incredible lunch served with some mouthwatering Fresh Florida fish. Needless to say, we did not leave hungry. That’s for sure.
Back this glorious Blueberry Gorgonzola Farmer’s Salad. Since it uses fresh corn on the cob from Florida, you are going to need to cut the kernels off the cob. If you have a bundt pan, that works great because you can hold the cob on top of the center of the pan and have the kernels fall into the pan. If not then I recommend placing a small bowl upside down in a larger bowl and place the corn on the cob on top of the small bowl and then allow the kernels to fall into the larger bowl. It works great.
After you have the kernels of corn in the bowl, add them to salted boiling water to cook. Cover and cook for 4 minutes. Then drain and rinse with cold water. Now the corn is ready to add to the salad.
After the corn is ready, then it is a matter of assembling the Blueberry Gorgonzola Farmer’s Salad. You can serve it in a large salad bowl and serve it from there.
Another option is to divide up the Blueberry Gorgonzola Farmer’s Salad into smaller individual salad bowls. Either way, this Blueberry Gorgonzola Farmer’s Salad tastes amazing with the fresh Florida blueberries, tomatoes, and corn.

Blueberry Gorgonzola Farmer's Salad
Ingredients
- 2 large pieces corn on the cob
- 4 cups fresh romaine lettuce chopped
- 1/2 cup fresh blueberries
- 2 large fresh tomatoes cut into wedges
- 1/2 cup fresh crumbled gorgonzola cheese or blue cheese
- 2 cooked chicken breasts sliced
Instructions
- Cut the kernels from the corn.
- In a large pan over medium high heat, bring salted water to a boil. Add the cut kernels of corn and cook for 4 minutes. Drain and rinse. Set aside.
- In a large bowl, add the lettuce, corn, blueberries, tomatoes, cooked chicken, and crumbled gorgonzola cheese.
- Toss and serve with your favorite salad dressing.
