- Peaches – I’ve used large peaches that are ripe and firm for this recipe. The skin is left on for texture but be sure to wash them well before adding to the other salad ingredients.
- Mix greens – go ahead and use your favorite mix of greens such as spinach, kale, and arugula (rocket).
- Cherry tomatoes – washed and halved. You could also use regular tomatoes that are sliced as you would do in a traditional Caprese dish.

- 1 tablespoon honey
- 3 tablespoons extra virgin olive oil
- 1 tablespoon lime juice
- Sea salt

Instructions
- Wash peaches, cut in half, and remove seeds.
