Roasted Red Pepper Ricotta Crostini
Ingredients
- 1/2 French baguette sliced into 1/2-inch slices
- 1 Tablespoon olive oil
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup ricotta cheese
- 1-1/2 cups Mezzetta Roasted Red Peppers chopped
- 1/2 cup feta cheese crumbled
- 1/4 cup chopped Italian parsley or basil
Instructions
- Preheat oven to 400 Degrees F.
- Brush baguette slices with olive oil and place on baking sheet. Bake for approximately 5 minutes or until the edges are golden brown. Sprinkle with garlic powder, salt and pepper.
- Spread a spoonful of ricotta cheese over each baguette slice.
- Top each crostini with a spoonful of chopped Mezzetta Roasted Red Peppers.
- Sprinkle a few crumbles of feta cheese and chopped fresh Italian parsley or basil on top of each crostini.
- Serve the Roasted Red Pepper Ricotta Crostini immediately.
