A Dreamy No-Bake Delight

Pineapple Delight is a dreamy dessert with three layers of creamy goodness that make up the no-bake dessert.

Like my Pina Colada Poke Cake and Pineapple Ice Cream recipe, Pineapple Delight is a great make-ahead dessert that is perfect for any occasion, from casual gatherings to special celebrations.

What You’ll Need

Equipment

  • Food Processor – This can be used to crush graham crackers for the graham cracker crust.
  • Plastic Wrap – To be used to cover the pan when chilling the dessert.
  • Stand Mixer or Electric Hand Mixer to mix the filling
  • Large Mixing Bowls – To be used with the hand mixer if you don’t have a stand mixer.
  • Dessert Plates – To be used to serve the Pineapple dream dessert.
  • Spatula – To lift the dessert from the pan and place it on the dessert plates.

Ingredients

Below, I discuss the ingredients and possible substitutions if you don’t have a specific ingredient. To make Pineapple Delight, you’ll need the following simple ingredients:

Crust

  • 2 ⅓ c crushed graham crackers
  • ⅓ c brown sugar
  • ¾ c melted butter

Second Layer: Cream Cheese Layer

  • 16 oz cream cheese
  • ⅓ c powdered sugar
  • ¼ c Greek yogurt
  • ¼ c pineapple juice
  • ½ tsp salt
  • 20 oz can of crushed pineapple drained and divided
  • 3.4 oz package of instant vanilla pudding mix
  • 2 c cool whip

Third Layer: Pineapple Whipped Cream Topping

  • 2 c cool whip
  • ½ can of crushed pineapple
  • ½ tsp vanilla
  • Crushed graham crackers for topping

Substitutions

  • Graham Cracker Crumbs – If you can’t find graham cracker crumbs at the grocery store, then you can buy regular graham crackers, place them in a plastic zip-top bag, and crush them by rolling over them with a rolling pin. Other substitutions include using crushed:
    • Vanilla wafers
    • Shortbread cookies
    • Gingersnaps, or
    • Cornflakes
  • Greek Yogurt – Instead of Greek Yogurt, you could use plain yogurt or sour cream instead.
  • Vanilla Pudding – Instead of Vanilla Pudding, you can use cheesecake pudding and add one teaspoon of vanilla extract.
  • Cool Whip – I recommend buying either a 16-ounce container of Cool Whip or two 8-ounce containers. A single 8-ounce container of Cool Whip will not be enough. If you don’t have Cool Whip, you can make a Homemade Whipped Topping recipe for fluffy whipped cream.

How To Make Pineapple Delight

Making Pineapple Delight is a breeze. Follow these simple steps:

Step 1: Prepare the Crust

  1. In a medium mixing bowl, combine the crushed graham crackers and brown sugar.
  2. Add in the butter; and
  3. Mix until well combined and until the texture is like wet sand.
  4. Press the graham cracker mixture into the bottom of a 9×13” baking dish, and place the dish into the refrigerator to chill until the filling is made.

Step 2: Prepare the Cream Cheese Layer

  1. In the bowl of a stand mixer fitted with a paddle attachment, combine cream cheese and powdered sugar.
  2. Mix on low speed until the powdered sugar is incorporated, then turn the mixer speed up to medium-high and mix until smooth.
  3. Add Greek yogurt, pineapple juice, and salt. Mix to combine.
  4. Add in ½ a can of pineapple and mix. Add in the vanilla pudding and mix to combine.
  5. Remove the bowl from the stand mixer and add in the cool whip. Fold in using a rubber spatula.
  6. Spoon the filling into the cooled crust and smooth it out.

Step 3: Prepare The Pineapple – Whipped Cream Topping

  1. In a medium mixing bowl, add the cool whip, the remaining ½ can of crushed pineapple, and vanilla.
  2. Stir until all ingredients are well combined.
  3. Evenly spoon the mixture over the cream cheese filling layer.
  4. Sprinkle crushed graham crackers over the top.

Step 4: Chill

  • Cover and place into the fridge to chill for at least 4 hours before serving.

Ingredients

Crust:

  • 2 ⅓ cups crushed graham crackers
  • ⅓ cup brown sugar
  • ¾ cup melted butter

Filling:

  • 16 oz cream cheese
  • ⅓ cup powdered sugar
  • ¼ cup Greek yogurt
  • ¼ cup pineapple juice
  • ½ tsp salt
  • 20 oz can crushed pineapple drained and divided (1/2 for filling & 1/2 for topping)
  • 3.4 oz package instant vanilla pudding
  • 2 cups cool whip

Topping:

  • 2 cups cool whip
  • ½ (20-ounce can) crushed pineapple
  • ½ tsp vanilla
  • Crushed graham crackers for topping

Instructions 

Crust

  • In a medium-sized mixing bowl, combine crushed graham crackers and brown sugar.
    2 ⅓ cups crushed graham crackers, ⅓ cup brown sugar
  • Add in the butter and mix until well combined and the texture is like wet sand.
    ¾ cup melted butter
  • Press into the bottom of a 9×13” baking dish. Place into the fridge to chill until the filling is made.

Cheesecake Filling

  • In the bowl of a stand mixer fitted with a paddle attachment, combine cream cheese and powdered sugar.

  • Remove the bowl from the stand mixer and add in the cool whip. Fold in using a rubber spatula. Spoon the filling into the cooled crust and smooth it out.

  • In a medium-sized mixing bowl, combine the cool whip, the remaining ½ can of crushed pineapple, and vanilla.

  • Evenly spoon the topping over the cream cheese filling mixture.
  • Sprinkle crushed graham crackers over the top.
