This dreamy Pineapple Delight Dessert includes tangy pineapple, velvety cream cheese, airy whipped cream, and buttery graham cracker crust for a tropical sensation!
In a medium-sized mixing bowl, combine crushed graham crackers and brown sugar.
2 ⅓ cups crushed graham crackers, ⅓ cup brown sugar
Add in the butter and mix until well combined and the texture is like wet sand.
¾ cup melted butter
Press into the bottom of a 9x13” baking dish. Place into the fridge to chill until the filling is made.
Cheesecake Filling
In the bowl of a stand mixer fitted with a paddle attachment, combine cream cheese and powdered sugar.

Mix on low speed until the powdered sugar is incorporated.
⅓ cup powdered sugar
Turn the mixer speed up to medium-high and mix until smooth.
Add Greek yogurt, pineapple juice, and salt. Mix to combine.
¼ cup Greek yogurt, ¼ cup pineapple juice, ½ tsp salt
Add in ½ of the 20-ounce can of pineapple and mix.

Add in the vanilla pudding and mix to combine.
3.4 oz package instant vanilla pudding
Remove the bowl from the stand mixer and add in the cool whip. Fold in using a rubber spatula. Spoon the filling into the cooled crust and smooth it out.

Pineapple Whipped Cream Topping
In a medium-sized mixing bowl, combine the cool whip, the remaining ½ can of crushed pineapple, and vanilla.
2 cups cool whip, ½ (20-ounce can) crushed pineapple, ½ tsp vanilla
Evenly spoon the topping over the cream cheese filling mixture.
Sprinkle crushed graham crackers over the top.

Cover and place the dessert into the refrigerator to chill for at least 4 hours before serving.
Notes
Storage - Pineapple Delight may be stored in an airtight container in the fridge for up to 4 days.
Graham Cracker Crumbs - If you can't find graham cracker crumbs at the grocery store, then you can buy regular graham crackers, place them in a plastic zip-top bag, and crush them by rolling over them with a rolling pin. Other substitutions include using crushed:
Vanilla wafers
Shortbread cookies
Gingersnaps, or
Cornflakes
Greek Yogurt - Instead of Greek Yogurt, you could use plain yogurt or sour cream instead.
Vanilla Pudding - Instead of Vanilla Pudding, you can use cheesecake pudding and add one teaspoon of vanilla extract.
Cool Whip - I recommend buying either a 16-ounce container of Cool Whip or two 8-ounce containers. A single 8-ounce container of Cool Whip will not be enough. If you don't have Cool Whip, you can make a Homemade Whipped Topping recipe for fluffy whipped cream.
Freezing - You can freeze Pineapple Delight for up to a month. Just make sure to cover it securely before freezing. When you're ready to enjoy it, thaw it in the refrigerator overnight before serving.
