Pineapple Delight

This dreamy Pineapple Delight Dessert includes tangy pineapple, velvety cream cheese, airy whipped cream, and buttery graham cracker crust for a tropical sensation!

Crust

  • In a medium-sized mixing bowl, combine crushed graham crackers and brown sugar.
    2 ⅓ cups crushed graham crackers, ⅓ cup brown sugar
  • Add in the butter and mix until well combined and the texture is like wet sand.
    ¾ cup melted butter
  • Press into the bottom of a 9x13” baking dish. Place into the fridge to chill until the filling is made.

Cheesecake Filling

  • In the bowl of a stand mixer fitted with a paddle attachment, combine cream cheese and powdered sugar.
    16 oz cream cheese
  • Mix on low speed until the powdered sugar is incorporated.
    ⅓ cup powdered sugar
  • Turn the mixer speed up to medium-high and mix until smooth.
  • Add Greek yogurt, pineapple juice, and salt. Mix to combine.
    ¼ cup Greek yogurt, ¼ cup pineapple juice, ½ tsp salt
  • Add in ½ of the 20-ounce can of pineapple and mix.

  • Add in the vanilla pudding and mix to combine.
    3.4 oz package instant vanilla pudding
  • Remove the bowl from the stand mixer and add in the cool whip. Fold in using a rubber spatula. Spoon the filling into the cooled crust and smooth it out.

Pineapple Whipped Cream Topping

  • In a medium-sized mixing bowl, combine the cool whip, the remaining ½ can of crushed pineapple, and vanilla.
    2 cups cool whip, ½ (20-ounce can) crushed pineapple, ½ tsp vanilla
  • Evenly spoon the topping over the cream cheese filling mixture.
  • Sprinkle crushed graham crackers over the top.

  • Cover and place the dessert into the refrigerator to chill for at least 4 hours before serving.

Notes

  • Storage - Pineapple Delight may be stored in an airtight container in the fridge for up to 4 days.
  • Graham Cracker Crumbs - If you can't find graham cracker crumbs at the grocery store, then you can buy regular graham crackers, place them in a plastic zip-top bag, and crush them by rolling over them with a rolling pin. Other substitutions include using crushed:
      • Vanilla wafers
      • Shortbread cookies
      • Gingersnaps, or
      • Cornflakes
  • Greek Yogurt - Instead of Greek Yogurt, you could use plain yogurt or sour cream instead.
  • Vanilla Pudding - Instead of Vanilla Pudding, you can use cheesecake pudding and add one teaspoon of vanilla extract.
  • Cool Whip - I recommend buying either a 16-ounce container of Cool Whip or two 8-ounce containers. A single 8-ounce container of Cool Whip will not be enough. If you don't have Cool Whip, you can make a Homemade Whipped Topping recipe for fluffy whipped cream.
  • Freezing - You can freeze Pineapple Delight for up to a month. Just make sure to cover it securely before freezing. When you're ready to enjoy it, thaw it in the refrigerator overnight before serving.
