I found this delicious Pea and Parsley Pesto Linguine Pasta recipe on Yahoo! Food in an article by former Bon Appetit senior web editor, Julia Bainbridge, entitled “The Four Ps: Peas, Parsley, Parmesan, and Pasta.”
The other night I was on Yahoo! Food looking for ideas for what to fix for dinner, and found this Pea and Parsley Pesto Linguine recipe that said “You want to cook tonight. You want it to be easy. With Cook This Tonight, we solve that problem for you.” And I was like Yes. That is exactly what I want. And the recipe and photo in the article looked wonderful! They answered my question of What’s for dinner? And I loved how Julia kept the article light-hearted with the use of alliteration! The article was written when peas were in season but the recipe totally works with frozen peas too. Yay!
Another great thing about this recipe is that it was not only delicious but was easy to make and budget friendly as well. I already had all the ingredients I needed on hand. So no trip to the grocery store was necessary!
I had my Pea and Parsley Pesto Pasta on the table in less than 30 minutes. With frozen peas, walnuts, parmesan cheese, and parsley, you can quickly make a delicious pesto to go with the linguine (or in my case spaghetti.)
