Kraft Thanksgiving Leftover Casserole

When AllRecipes.com asked us if we wanted to make the Kraft® Thanksgiving Leftovers Casserole, I said did not hesitate to say yes.  We have leftovers every Thanksgiving and this year was no exception.  It is so easy to make, taking only minutes to assemble and it tastes delicious.

This would also be a great casserole to make year-round with either chicken or turkey.

I used our leftover cornbread stuffing and layered it on the bottom of the casserole dish. It calls for mixed frozen vegetables, but since we had leftover green beans I used those for the vegetables.  Mix together the cooked turkey and vegetables with mayonnaise and layer that on top of the stuffing.  This adds moisture and prevents the turkey from drying out.  Then mix cheddar cheese with the mashed potatoes and spread on top of the turkey mixture.  Easy.
