This pumpkin overnight oats recipe is an easy recipe, great for meal planning, and makes a delicious, filling, wholesome whole grains breakfast with comforting fall flavors.

With flax seeds or chia seeds, if you prefer, and steel-cut oats, you can make this easy breakfast the night before and have it ready to eat the next morning.

What You’ll Need To Make Pumpkin Overnight Oats

Ingredients

Below I discuss the ingredients and possible substitutions in case you don’t have a specific ingredient. However, if you are looking for the specific measurements of each ingredient, be sure to scroll down to the bottom of this article, just above the comments, for the printable recipe card, which includes all the ingredients and the specific amounts of each one.

  • Milk – I used whole milk. However, you could use low-fat milk, almond milk, or greek yogurt, if you prefer.
  • Rolled Oats – I used rolled oats because that is what I had on hand, and they provide an excellent texture to the overnight oats. However, you can use steel-cut oats. I don’t recommend quick oats for this recipe.
  • Pumpkin Puree – I used canned pumpkin puree. I recommend using this over the pumpkin pie mix because you want as much of that real pumpkin flavor as possible.
  • Brown Sugar – I used brown sugar. However, you could use white sugar, honey, or your sweetener of choice.
  • Pumpkin Spice – I used the pumpkin pie spice blend because it has all of the wonderful spices found in pumpkin pie. However, if you don’t have it, you could use cinnamon instead or make your own pumpkin pie spice with cinnamon, nutmeg, and ginger.
  • Vanilla – I highly recommend using real pure vanilla instead of imitation vanilla.
  • Ground Flax Seeds – These add fiber, help make the overnight oats thicker and creamier, and help you feel full for a longer time.
  • Pecans – Add some chopped pecans for texture and crunch. I also like to garnish the oats on top with chopped pecans.

Directions

  1. Add the oats and milk into a glass mason jar.
  2. Add the pumpkin puree.
  3. Add the brown sugar, pumpkin pie spice, and flax seeds.
  4. Add the chopped pecans
  5. Stir or shake well until all ingredients are well-combined.
  6. Refrigerate the overnight oats for at least 4 hours or overnight.
  7. Enjoy cold or warmed-up with a little whipped cream, pumpkin spice, and chopped pecans for garnish.

Recipe Tips

  • Vegan – Make these overnight oats vegan by using almond milk instead of regular milk, maple syrup instead of brown sugar, and cinnamon instead of pumpkin pie spice.
  • More Protein – To add more protein, use Greek yogurt instead of whole milk.

  • Maple Syrup – add pure maple syrup instead of brown sugar for a delicious maple flavor pumpkin oatmeal.
  • Another option is to change it up by adding your favorite toppings:

  • 1/2 cup Whole milk
