Biscoff Cookies: These buttery cookies add a unique flavor to the crust. If you can’t find them, Graham crackers, Golden Oreos, or Shortbread cookies are excellent substitutes.

Cream Cheese: Remove the cream cheese from the refrigerator about 30 minutes before starting to ensure it is softened to room temperature for easy mixing. Also, use the block cream cheese instead of the spreadable cream cheese in the tub.

Whipped Topping: You can use either homemade whipped cream or store-bought whipped topping, like Cool Whip.

Blueberry Pie Filling: You’ll need two (21-ounce) cans of blueberry pie filling. However, for a nice touch, consider making your own homemade blueberry pie filling recipe.

How To Make Blueberry Yum Yum

Combine the cookies and melted butter and stir until mixed well.  Reserve a tablespoon for the top.

Press the crust into the bottom of a 9×13-inch pan.

Beat the cream cheese with the confectioner’s sugar and vanilla until smooth.

Fold one tub of cool whip into the cream cheese. 

Spread the cream cheese mixture evenly over the crust.

Spoon the blueberry pie filling over the cream cheese layer and smooth out evenly.

Spoon several spoonfuls of Cool Whip over the blueberry pie filling and gently spread over the top until the pie filling is completely covered with Cool Whip.

Sprinkle the remaining cookie crumbs over the cool whip and add some blueberries and mint leaves.

Refrigerate or freeze until ready to serve.

• You’re Crushing It: I used a food processor to crush the Biscoff cookies, which is the easiest way to crush cookies. However, if you don’t have one, you can add the cookies to a plastic ziplock bag and use a rolling pin to crush them.
• Cookie Exchange: To change it up, use graham cracker crumbs, Golden Oreos, or shortbread cookies, instead of Biscoff cookies.
• Fresh Blueberries: Add a layer of fresh blueberries on top of the dessert for extra sweetness and visual appeal.
