Zucchini Noodles With Pesto And Bacon

Ingredients

  • 1 large zucchini
  • 4 slices bacon
  • 2 tomatoes, chopped
  • 1/3 cup pesto

Instructions

  • Slice zucchini using a spiralizer, mandoline, or julienne slicer, and set aside.
  • Chop bacon into bite-size pieces. Cook bacon fully, remove from pan. (I prefer to place mine on a paper towel to soak up some grease.)
  • In a microwave safe bowl, cook zucchini noodles for 4-5 minutes, or until they become tender (I cook at 1 minute intervals).
  • Toss noodles with pesto, bacon and chopped tomatoes. ENJOY!
