  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 egg
  • 2 tablespoons butter (melted)
  • 1 teaspoon vanilla


  • Heat the griddle or pan over medium-high heat. Let heat while you make the pancake batter. Reduce heat to medium-low heat.
  • Grease the griddle or pan with butter.
  • Sift together all the dry ingredients, including the flour, sugar, baking powder, baking soda, and salt. Whisk all dry ingredients to thoroughly combine.
  • Pour the wet ingredients into the bowl with the dry ingredients and whisk together.
  • Whisk just until the batter is smooth and most lumps are gone.
  • Using a 1/4 cup measuring cup, pour the pancake batter onto the greased hot griddle or skillet.
  • Cook for a minute or 2 until the edges bubble.
  • Using a wide spatula, slide it under the pancake, and using your wrist, flip it over and cook for another minute or so.
  • Remove from griddle and place on a plate. Top with butter and maple syrup. Enjoy!


If you don't have buttermilk, just add 2 tablespoons white vinegar to 1 cup of milk and let it sit for 5 minutes. Then use it in the recipe in place of buttermilk.
