Roasted Red Pepper Ricotta Crostini
Roasted Red Pepper Ricotta Crostini are quick and easy, gourmet little bite-sized appetizers that are ready in 15 minutes and perfect for the big game and your homegating party.
- 1/2 French baguette sliced into 1/2-inch slices
- 1 Tablespoon olive oil
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup ricotta cheese
- 1-1/2 cups Mezzetta Roasted Red Peppers chopped
- 1/2 cup feta cheese crumbled
- 1/4 cup chopped Italian parsley or basil
Preheat oven to 400 Degrees F.
Brush baguette slices with olive oil and place on baking sheet. Bake for approximately 5 minutes or until the edges are golden brown. Sprinkle with garlic powder, salt and pepper.
Spread a spoonful of ricotta cheese over each baguette slice.
Top each crostini with a spoonful of chopped Mezzetta Roasted Red Peppers.
Sprinkle a few crumbles of feta cheese and chopped fresh Italian parsley or basil on top of each crostini.
Serve the Roasted Red Pepper Ricotta Crostini immediately.
