In a large mixing bowl combine flour, sugar, baking powder, baking soda, and salt. In a separate large mixing bowl, whisk together the eggs, vegetable oil, buttermilk, and International Delight Iced Coffee - Caramel Macchiato. Pour the flour mixture into the egg mixture and whisk until the lumps are gone.
Heat a large skillet or griddle over medium heat and spray with cooking spray. Using a 1/4 cup measuring cup for each pancake, pour the batter in the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
Serve with butter, syrup and International Delight Iced Coffee - Mocha flavor.
Tip: If you don't have buttermilk, create "sour milk" by combining 3/4 cup milk with 2 teaspoons vinegar in a medium bowl and setting aside for 5 minutes. Then use instead of buttermilk.
