Ingredients

  • 1 5.5-ounce package Sweet Earth Vegan Benevolent Bacon
  • 8 slices Vegan bread
  • 8 lettuce leaves
  • 2 small tomatoes sliced (I used sliced cherry tomatoes)
  • Vegan mayonnaise

Instructions

  • Use an electric skillet set to 375° F., and allow the skillet to heat completely and lightly oil with cooking oil. Do not use cooking spray.
  • Cook Benevolent Bacon for about 2-3 minutes per side, turning only once. While it cooks, occasionally check the underside and look for discoloration and a dryer overall appearance. The color will become a darker red and may even begin to have some dark brown/black spots or edges. Turn and repeat for the remaining side.
  • While the bacon is cooking, toast the bread.
  • Spread the Vegan mayonnaise on the toast and top with lettuce, tomatoes, and Sweet Earth Vegan Benevolent Bacon.
  • Cover with the second piece of toast.
  • Enjoy!
