• Ground beef – use a high quality ground beef for maximum flavor. 
• Sweet onion – yellow onion will also do if you don't have sweet onions.
• Garlic – garlic cloves that are minced are the best for the overall flavor of this dip. If you don't have cloves then you can use pre-mined bottled garlic instead. 
• Petite diced tomatoes – draining the tomatoes well will reduce any excess liquid in this dip so that it isn’t runny. You could use a can of spicy Ro-Tel tomatoes instead if you want a kick of heat.
• Dill pickles – finely chopped. You will also need to keep extra dill pickles in hand for garnish.
• Ketchup
• Worcestershire sauce
• Kosher salt – or regular table salt. 
• Black pepper – ground pepper or freshly ground peppercorns.
• Cream cheese – this should be softened and cubed by the time you add it to other ingredients for easy incorporation. Make sure that you only use block cream cream, not cream cheese that's packaged in a tub. 
• Sharp cheddar cheese – shredded from a block, not pre-shredded. 
• Monterey Jack cheese – shredded from a block, not pre-shredded.
• Parsley – freshly chopped as an optional garnish.

How To Make Dill Pickle Cheeseburger Dip

1. In a large skillet over medium-high heat add the ground beef and break it up, once broken up add the onions and cook, stirring occasionally until the beef is cooked through with no pink left and the onions are translucent, 8-10 minutes.
2. Add the garlic and cook until fragrant, stirring it in, 30 seconds. Drain off any excess grease.
3. Add the tomatoes, pickles, ketchup, Worcestershire, salt, and pepper, mix to combine.
4. Add the cream cheese and stir constantly until it is melted into the dip.
5. Lower the heat to low and add the shredded cheeses, stir it in until melted.
6. Take off the heat and serve with more chopped pickles for garnish and parsley.

Pro Recipe Tips

• Shredding your cheese from a block of cheese instead of having purchased pre-shredded cheese always seems to be best for overall taste and it also seems to melt the cheese better too. 
• You can pretty much use any cheese that melts well but be sure to use a flavored cheese as it's required for flavoring. I wouldn't suggest using mozzarella for this reason as I think it's too mild. Your best bet is using sharp cheddar cheese. 
• To reheat stored dill pickle cheeseburger dip, simply warm the dip up in the microwave or in a skillet. You could even add it to a slow cooker and leave it on the warm setting, stirring every 15 minutes until completely eaten by your guests and family!
• Use high quality ground beef for this dip to maximum flavor. While you can opt to use lean ground beef, regular ground beef packs a ton of flavor thanks to the fatty content in it. 
• Make sure to take your block of cream cheese out of the refrigerator about 30 minutes prior to making this dip. Softened cream cheese will be much easier to incorporate into the rest of the ingredients. 

Recipe Variations

• For a spicy cheeseburger dip, make use of a can of spicy Ro-Tel tomatoes instead of the diced petite tomatoes. Cayenne pepper as well as diced jalapenos can also be added to the skillet while cooking the ground beef to increase the heat factor.

How Should I Store Leftover Cheeseburger Dip?

Leftover pickle cheeseburger dip can be placed in an airtight container or in a serving bowl, tightly covered with plastic wrap, to be stored for up to 3-4 days in the refrigerator.

Be mindful of the fact that the cherry tomatoes can become soggy in the fridge after 1-2 days so I do recommend using up any leftover dip sooner than later. 

If you'd like to extend the shelf life of leftover dip, store it in the freezer for up to 3 months. Thaw overnight in the refrigerator and reheat in a skillet, in the microwave, or in a slow cooker.
