2 tablespoon olive oil or as needed 2 tablespoons freshly grated Parmesan cheese 1/2 teaspoon salt 1/2 teaspoon garlic powder 1/4 teaspoon ground black pepper 1/2 teaspoon herbs de provence 2 pounds potatoes quartered (I used yukon gold)
Preheat oven to 400 degrees F. Spray a 9x13-inch baking dish with cooking spray, or cover pan with foil.
Mix oil, parmesan cheese, salt, garlic powder, herbs de provence, and black pepper together in a bowl. Add potatoes in the bowl; toss to coat.
Arrange potatoes, in one layer, onto the prepared baking dish.
Bake in the preheated oven for 15 to 20 minutes. Turn potatoes once; continue baking until golden and crispy, about 15 to 20 more minutes.
